The more you feel deprived of your favorites, the more likely you are to quit on a diet. So, have one cookie, and stop. Or have just a tiny little scoop of ice cream (better if it's lower fat/sugar.) and stop.

You can still let yourself have an occasional treat and be successful on a diet. Just be sure you can have a small serving and stop there.

Try sugar-free cookies and maybe some frozen yogurt.
Or have some sweet fruit or sorbet.
Eventually you won't even miss the junk.
