Because they are going bad, the ammonia smell is an organic compound called an amine. It is a sign that the scallops are starting to go off.

Freshly purchased isn't necessarily fresh scallops. Ammonia is the first sign of old seafood. When you cooked them, you bought out even more bacteria through the heating process. I won't say they will kill you but you'll be tripping to the John after you eat them. Sorry.........

cos they are not fresh.
just cos they are freshly purchased does not mean that they were fished that day.
fresh fish should have no smell at all really.
to avoid this again, next time buy live scallops and get the fishmonger to open them for you, or do it yourself if you know how, be careful though they are strong blighters.

They are bad. Fish and shellfish should not smell or taste like ammonia.

This could be a result of the chemicals used to clean and/or preserve them in shipment. It's always a best bet to thoroughly wash any fresh fish/shellfish

They're bad! If you smell ammonia, don't eat them. I did that once with crab legs, got sick, and didn't touch them again for 10 years. Throw them away!
