Good question Sam.

They wear a lot of hats.

They ARE the representation of their government in the country where they are.

The primary goal is to communicate with the foreign government on the behalf of the country they represent.

As a traveller, it is where you go if you lose your passport, or get into some trouble. The embassy can only work in the arena of international law. But they may have some influence and can get some strings pulled if both countries are on good terms with one another.

They also act as the eyes and ears of another country. Although these are only supposed to be respective departments of State, intelligence gathering organisations often make use of the extraterritorial status of the embassy grounds.

That is, The Brazilian embassy in Washington D.C. is actually considered part of Brazil, and U.S. laws do not extended inside. An invasion of the embassy would equate to an invasion of Brazil.
