My vote would be simple cream puffs. For alittle time and effort, you have a wonderful and elegant and delicious dessert. Fill each with pudding or whip cream, dust the tops with powder sugar. Mint leaves and berries among them in the platters and you are 'spectacular' (You can also use this for making savory appetizers as well. Simply make the puffs smaller and fill with a chicken, almond and grape salad mixture....yum)

Make a few Dump Cakes
for each cake
1 can Crushed pineapple
1 can Cherry pie filling
1 box Yellow cake mix
1 stick of margarine dotted on top
1 cup pecans
Directions:
"Dump" the ingredients in the order listed in a 9 x 13 cake pan. Bake for 1 hour @ 350
Serve with whipped cream

Make three or four 9" or 10" cheesecakes; each will serve 12-16 people. You'll have to make them at least one day in advance because they cool in the oven for several hours and then must be chilled for several hours.
Here is my recipe for chocolate cheesecake, adapted from The Joy of Cheesecake:
CRUST
6 tbs. butter, melted
1/4 cup sugar
1 1/2 cup chocolate cookie crumbs
Butter the inside of a 9" springform pan. Mix these ingredients together and press into the pan. Place in the freezer to chill while you prepare the filling.
FILLING
1 1/2 lb. cream cheese, softened
3/4 cup sugar
3 eggs
1 tsp. vanilla
5 oz. semi sweet baking chocolate, melted
1 cup sour cream
Preheat oven to 275F. Beat together cream cheese and sugar until light and creamy. Beat in eggs and vanilla, then stir in the chocolate and sour cream. Pour into prepared chilled crust and bake for 75 minutes. When the time is up, turn the oven off and put a wooden spoon in the oven door to hold it open a crack. Let the cheesecake cool in the oven for several hours, then refrigerate. Serves 12-16 people.

Fresh Apple Crumble with Vanilla Ice Cream
Just double triple (whatever) the ingredients
For filling:
5 large Golden Delicious apples (about 3 pounds)
1 cup granulated sugar
Juice of one lemon
1/4 cup brandy
1/2 teaspoon ground cinnamon
For crumble:
About 1 cup walnuts or pecans, chopped
1 cup all-purpose flour
1 1/4 cups rolled oats
1/2 cup dark brown sugar
1 teaspoon ground cinnamon
Pinch salt
1 stick cold butter, cut into small pieces
Vanilla ice cream, as an accompaniment
Preheat oven to 350 degrees F.
Peel, core and slice apples into 1/4-inch slices. Transfer apples to a large mixing bowl and toss with sugar, lemon juice, brandy, and cinnamon. Pour into a lightly greased 13 by 9-inch baking dish.
In another large bowl make a coarse crumb mixture out of crumble ingredients using fingers. Top apples with mixture and bake about 45 minutes.
Serve warm with vanilla ice cream.

Shortcake for 50
10 1/2 cups all-purpose flour
4 1/4 cups sugar, divided
1/2 cup plus 1 tablespoon baking powder
4 tsp. salt
1 cup cold butter or margarine
3 cups whipping cream
1 1/2 cups water
8 quarts fresh strawberries, sliced
whipped cream or ice cream
In a bowl, combine flour, 2¼ cups sugar, baking powder and salt; cut in butter until crumbly. Stir in cream and water just until moistened. Drop by ¼ cupfuls 2 inches apart onto ungreased baking sheets. Bake at 450° for 15 minutes or until golden brown. Cool on wire racks. Combine berries and remaining sugar.
To serve, split shortcakes lengthwise; spoon about 1/3 cup berries and whipped cream on both halves. Replace tops, top with along 1/3 cup of berries and additional cream.

Because there are so many people, you probably don't want to spend a lot of time preparing food. I recommend (also taken from previous answers) buying a lot of ice cream, making some cookies, and having some fondue fountains with fruit. I think, because there are so many people, they would perfer a variety of desserts. There's also store-bought desserts, if you really need extra. Hope that helps!

Apple Crisp
48 portions (4 oz portion size)
8 lb apples, peeled and sliced
4 oz sugar
4 tbsp lemon juice
1 lb butter
1 lb 8 oz brown sugar
2 tsp. cinnamon
1 lb. 8 oz pastry flour (could use all purpose instead)
Toss the apples gently with the sugar and lemon juice.
Spread the apples evenly in a 12x20 inch bake pan.
Rub the butter, sugar, cinnamon and flour together until well blended
and crumbly. Sprinkle over the apples. Bake at 350F for about
45 minutes or until top is browned and the apples are tender.

Reese's Chocolate Peanut Butter Squares (No bake) ::Makes 36 (you'd have to double it)::
1 1/2 cups graham cracker crumbs
1 lb confectioners' sugar (3 to 3 1/2 cups)
1 1/2 cups peanut butter
1 cup butter, melted
1 (12 ounce) bag milk chocolate chips
Wax Paper
Combine graham crumbs, sugar and peanut butter and mix well.
Blend in melted butter until well combined.
Line a 9x13 inch pan with the wax paper.
Press mixture evenly into the pan.
Melt chocolate chips in microwave or in double boiler.
Spread over peanut butter mixture.
Chill until just set and cut into bars (these are very hard to cut if the chocolate gets "rock hard".)

For my wedding I did a couple of beautiful trifles and they were luscious and easy.
Cube an angel food cake and separate for 3 layers.
Put the first layer in a nice (deep) glass dish or bowl
Cover it with White Chocolate Mousse pudding and sprinkle on raspberries and shavings of white chocolate.
Put on the next layer and repeat the filling.
Put on the 3rd layer and press the whole thing down and weight the top with a plate. Refrigerate about 1/2 hour, then "frost" the top with more White Chocolate Mousse pudding, arrange your raspberries and decorate the top with melted white and dark chocolate drizzles.
It really is simple and delicious

Otherwise you could bake a variety of cookies (allrecipes.com has recipes for just about anything)
another thought would be to set up a few fondue bowls and have warmed chocolate for dipping all the fruit in (from previous answer suggesting that you have fruit trays)
