Brown sugar is unrefined sugar. When they make cane sugar, naturally it is dissolved in molasses and other compounds. Brown sugar is that cane sugar that had the impurities removed and some (but not all) of the molasses removed. Dark brown sugar has more molasses than light brown sugar, and white sugar has none.

It's just white sugar that hasn't been bleached. It's still processed.
Sugar is a basic element found in starchy food. Sugar cane contains 14% trace elements, minerals and vitamins, plus chlorophyll. The sugar we purchase in the supermarket for personal consumption is heated up in chalk-milk, so that calcium and protein are extracted. It initially becomes an alkaloid, thus destroying all vitamin content.
In the second phase, the sugar is mixed with acid chalk, carbonic gas, sulphur dioxide and finally, with natrium bicarbonate. This mixture is cooked and cooled off several times, and thereafter crystallized and centrifugalized.
This dead mass is then treated with strontium hydroxide. Subsequently, it arrives at the refinery where it is passed over chalk carbon acid to clean it. Dark coloring is removed by adding sulphuric acid and then it is filtered with bone charcoal. Finally, it is colored with Indathrenblue, or the highly toxic Ultramarine.
If you want something a little less toxic to sweeten your food/drinks, try demerara sugar. It is also brown, but unlike normal brown sugar, this is actually a relatively natural product.

Most sugar comes from a plant called sugar cane. When it is squeezed and boiled down, the sap is turned to syrup and sugars of various grades. The most highly refined sugar is white. The remaining sugars are darker, containing some residual organic and carmelized compounds, and some grades are barely brown, some are very dark and finally a residual syrup is created ending up in light and dark 'blackstrap' molasses.
The darker sugars are probably better for you health-wise because they are not as highly refined.

Brown sugar is nothing more than white sugar with molasses added. Watch what brand you buy as some just have coloring.
A dark brown sugar will add more flavor and beautiful color to cookies, although today most people buy only light brown. It's also excellent in anything like pumpkin bread/pie, ginger cookies, etc. I use it in my chocolate chip and oatmeal cookies and everyone always asks for the recipes. They don't realize it's the DARK brown sugar they like.
If you don't have brown sugar you can substitute white if you add molasses. For one cup of sugar add 1 T. molasses for light brown and 2 T. for dark brown.

Brown sugar used to be less processed sugar, and molasses was what they took out to make white sugar. Today many brown sugars have caramel color added . You have to read the label to make sure what you get is less processed and not just white sugar with color.
