An open bottle of white wine needs to be drunk within a week. Actually that's the rule of thumb for all wine, which is why you usually get no more than 4 glasses out of a bottle. Red wines tend to last a little longer, but the taste will start to deteriorate more with time - I've heard 1 month max. If it's a real good (expensive) red wine, you can recork it with a professional tool that sucks air out, make sure you store it on its side (not standing), and in a cool, dark place.

Wine, which is a fermented drink and has a relatively low percentage of alcohol, tend to deteriorate in a short while. That also depends on where it is kept after the bottle is open. Heat, light, oxygen, and vibration are the main causes to make it go bad. Make sure to consume a bottle of wine in a couple of days after it is open. If there is some left in the bottle, you can use it in cooking.

Some never will - you need good, naturally produced wines to have them turn to vinegar!!! most of the time, it will not happen.

Second, usually you will need to have in it some "mother", which is a "mold" that contains the set of bacteria needed for the transformation - otherwise it will take probably a couple of months!!!
