Here is the recipe for pancakes I have been making for 40 years. My kids love them, the g-kids love them and all our friends love them.
1 ¼ cups sifted flour
3 tsp. baking powder
1 Tbsp. sugar
½ tsp. salt
1 egg
1 cup milk
2 Tbsp. oil

Sift dry ingredients together. Combine wet ingredients. Mix together until all moistened.

HEAT griddle--you will know it is hot enough when a drop or two of water beads up and sizzles. Put small amount of oil (I use Canola) on a folded paper towel and grease griddle lightly. too much grease results in a crusty pancake. Pour pancake mix from ladle onto griddle to the size of pancake you want. When the bubbles form and break on the top it is time to turn them over. You can peek to make sure they are not getting too brown. For the next batch, you may have to regrease the griddle. You will be a pro after you have made this a couple of times.

If you're going to buy a mix and you want them sweet, and if you like chocolate-go to Trader Joe's and get the chocolate pancake mix-chocolate chocolate chip. they are PHENOMENOL. And if you want to make plain pancakes...use recipes or mixes that have buttermilk in them. The greatest plain pancakes are the buttermilk pancakes.

From scratch,
2 c flour
2 t banking powder
1 t baking soda
1/2 t salt
3 T sugar
2 large eggs, slightly beaten
3 C buttermilk
4 T unsalted butter melted and some for griddle

Heat griddle, whisk flour, b powder, b soda, salt and sugar in medium bowl. add eggs, buttermilk, 4 T butter, whisk to combine. Batter should have small to medium lumps. heat oven to 175. using a 4 oz ladle, about 1/2 c, pour batterin pools 2 inches away from each other. when pancakes are slightly dry around edges and bubbling on top,m flig over. cook until golden brown-about 1 minute. repeat with remaining batter, keeping finished pancakes on a heat-proof plate in the oven.

To make indian pancakes, I am giving the procedure.

Take rice ( Par boiled riced or Idly rice available in Indian shops),Urid dal (Phaseolus mungo, Black gram, polished) in the ratio of 1:4 soak well in water for about 5-8 hrs.

Grind it well in a mixer, add salt and mix well with hand for 10 minutes. Cover the container with a cotton cloth and keep aside at room temperature for 24 hrs for fermentation.

Urid dall contains soluble fibers which prevents colon cancer and lipid absorbption.

Effect of feeding black gram (Phaseolus mungo) on serum lipids of normal & diabetic guineapigs

After 24 hrs, mix well , make pancakes. Baking soda may be added to get more softness.

Enjoy with any hot or sweet chutneys.

Level of difficulty: Easy
Preparation Time: 15 minutes, plus standing
Cooking Time: 15 minutes
Ingredients
120g plain flour
2 eggs
300ml Milk
vegetable oil, for frying

5. Transfer to a plate and keep warm.

Buy some Bisquick and follow the directions, pancakes by them selves aren't really that sweet. They need syrup!
