Mix up your batter.
Chop up an apple.
Spray nonstick spray on a cake pan or glass pie pan, (batter should be about 1/2 inch deep or a little less)
Pour the batter into the pan. Top with the chopped apple. Sprinkle cinnamon and sugar.
Bake in an oven at 350 degrees until a tooth pick comes out clean.
Top with a little butter and some real maple syrup.

Well...if you do not have a frying pan, you probably do not have a griddle. Do you have any pan what-so-ever? You can really use any type of pan to make pancakes.
I saw pancakes oven-baked before...they included more than just the batter though. The batter was mixed with scrambled eggs, sausage, and cheese. You bake it off in a greased casserole. When it is finished you slice and serve with maple syrup or butter and powdered sugar. If you have no pan at all this would be a nice option for you.

Use the flat inverted surface of an iron, cookie sheet in the oven or even a sheet of foil. sause pans are flat on bottom also. micro-wave on plate, thermo-plastic, or cardboard. Put it in a ziplock, and boil in hot water, there are many ways to resource a goal to complete a task.
