i am chef myself , working in london for 5 years and have rewards for my work with medals and 1 cook book so far ,willing to bring that flair from london to bombay. i have worked in some high profile restaurants and hotels ,and want to put my passion and culinary flair,to improve dining experience in india.so any kind of input will be seriously appreciated, and sensible comments and ideas will be taken on board .many thanks

Wow , that is a wonderful idea. I think you are in the right place and Mumbai is the right place for you. Though i would suggest that you look closely about where you should set up such a fine dine restaurant. Try places like Bandra or even Worli though there is a lot of scope in the surburbs like Mulund ( try getting some veg restaurant it will work for sure) . You may avoid going to the town side as it is nearly reached its saturation point and it is very crowded but in terms of fine dine i stil suggest you try some research in areas like Bandra or Worli. Let me know if i can be of any help to you as i am a student of Hotel management from Dadar Catering College, interested in the Kitchen.

fine dining is doing very well at the moment in bombay.....
gourmet food and everything.
the best thing would be the work with a very good gourmet/new world cusine restaurant in bombay.........and then start off on your own.
you would need to get acquainted with the licences, probably find a partner, think if you would want it to be only a restaurant or a lounge, hire help.
so if you can get a job at an elite place, it would be the best thing.!

India is still high in indian food and I am not sure how successful, if you come with an exclusive non- indian cusine - continental that too. May be you should try with a multi cusine specialty - and fusion - Indo continental.
