1) "among Jack, Jeff and I"
example- John and I repaired the tractor.

2)"three primary effected areas are...."
effect - means something brought about by a cause or agent
to affect- means to regulate or change

1) Option 2 is better than 1 but neither one is very good. It would be best if you said "among us" or, if you MUST mention names, you should say "myself" when you end, not "I" and, preferably, use the word "between" instead of "among" to begin. Even though "between" technically means among two (people, things, etc). it sounds better (to me) than "among".
2) Neither option is good, here. You should say, "The three areas PRIMARILY AFFECTED are...."
