Use it. That' how I learned it.
Make it your friend. It teaches itself to you.
I started out on the old DOS version of Lotus many years ago, and now Excel is a daily part of my life, along with Access, SQL, etc.
Don't be too proud to get a book on the subject either - the "for dummies" books are really very good for learners. Don't let the name fool you.
If you master Excel, your employment opportunities grow exponentially!

I learned it by being dumped in over my head in a statistics class.
It didn't take long for me to devise spreadsheets that could do the tedious probability calculations on my behalf.
After that, learning more complex aspects of Excel was a downhill ride.
