i wanted to make some veggie burgers from scratch, but im not sure how, if you could give me a recipe or any guidelines that would be great.

Ingredients:

4 portobello mushrooms, sliced
1 cup of shiitake mushrooms, chopped
2 onions, chopped
2-3 cloves of garlic, minced
1 cup of brown rice
2 cups of water
2 organic eggs
1 block of firm tofu
2 Tbs of extra virgin olive oil
2 Tbs of soy sauce
2 Tbs of miso paste
1 cup of breadcrumbs
Sea salt and pepper
Directions:

Saute mushrooms and garlic with olive oil over medium-high heat until mushrooms lose their moisture and onions begin to caramelize. Add minced garlic and stir while cooking for another minute or two.

Add brown rice, water, and soy sauce. Cover with a lid and cook until the brown rice has absorbed all of the water. Then, let mixture cool.

Transfer rice and mushroom mixture into a food processor. Add organic eggs, tofu, miso paste, breadcrumbs, sea salt, and pepper. Process until all ingredients are smooth.

Use your hands to form mixture into patties. Refrigerate patties until they become firm.

Cook patties over medium-high meat with olive oil until golden and cooked to desired consistency.

My husband comes from a highly vegetarian family and this is a recipe that is used all the time. It is for Nut Loaf, but you can shape it into patties so that it can be served on a bun. Enjoy
BEST NUT LOAF

3 c. flour
3/4 c. sugar
3 1/2 tsp. baking powder
1 1/2 tsp. salt
1 beaten egg
1 1/2 c. milk
2 tbsp. salad oil
3/4 c. broken walnuts

Sift dry ingredients together. Combine egg, milk and salad oil. Add to dry ingredients, mix well. Stir in nuts. Bake in greased 9 1/2 x 5 x 3 loaf pan at 350 degrees for 1 hour or until done. Remove from pan and cool on rack.

I believe this is a credible source since most Mormons are great cooks. I hope it helps. This comes from "Essentials of Home Production and Storage" published by the Church of Jesus Christ of Latter Day Saints, 1978

2 cups (400 grams) soybean pulp
2 cups (400 grams) cooked brown rice
2 tablespoons (23 grams) vegetable fat
1 onion, chopped fine
1/2 tablespoon (8 milliliters) soy sauce
1/2 teaspoon (3 grams) salt
Flavor with garlic or sage
1/2 cup (70 grams) whole wheat bread crumbs (buttered)

Mix all ingredients (except bread crumbs) together. Shape into patties. Roll in whole wheat bread crumbs. Bake in greased pan at 350' F (177'C) until brown, or warm in frying pan. Serve with gravy, if desired.
To make soybean pulp: Soak beans in water for at least 3 hours. Boil beans in water for 15 minutes. Drain. Mix beans thoroughly by pounding or in a blender with enough water to puree into a stiff paste.

Vegetarian Black Bean Burgers with Cornmeal: Ingredients: * 2 15 ounce cans black beans, rinsed and drained * 1/2 cup whole wheat or all-purpose flour * 1/4 cup yellow cornmeal * 1/2 cup salsa * 2 tsp ground cumin * 1 tsp garlic salt * hamburger buns Preparation: Place beans in food processor; process until fairly smooth. Add flour, cornmeal, salsa, cumin and garlic salt. Process until well combined. Spoon mixture into 6 balls on a large plate and refrigerate at least 1 hour or up to 4 hours before cooking. Heat barbecue grill or ridged grill pan over medium heat. Coat grill or pan lightly with oil. Form each ball into a 4-inch patty about 1/2-inch thick. Place the patties on the grill or in pan and cook until browned and heated through, 4 to 5 minutes per side. Serve your black bean cornmeal patties on hamburger buns with your favorite toppings. -or if you like spicy- Spicy Vegetarian Black Bean Burger: Ingredients: * 1 15 ounce can black beans * 1/2 onion, diced * 1/2 red or yellow bell pepper, diced * 1/4 tsp cayenne pepper * 1 Ener-G egg replacer * 1 cup bread crumbs * oil for frying (optional) Preparation: Mash the beans in a large bowl and add remaining ingredients, mixing until well combined. Form into patties and lightly fry in oil. Or, fire up the grill and barbecue your black bean veggie burgers over a medium heat.

When I do it, I use kidney beans and breadcrumbs as my base and then add whatever veggies I have. Mash it up and then I use a whisked egg to hold it all together, so stir that in. Then I fry in a bit of olive oil. Maybe you could add some cheese as well? I haven't tried this but may work (and sounds nice to me - don't know why I haven't tried it!!).

1 tin soya beans - mash well
1 grated carrot
3 shallots finely sliced
1 lightly beaten egg
1/2 cup dry breadcrumbs
parsley or chives
1 garlic clove minced
salt and pepper to taste
Combine all ingredients in a bowl shape into patties and set in fridge for about an hour, then fry until golden in a little oil in a non-stick pan.
Serve on bread rolls with salad of your choice - lettuce, tomatoes, red onion, beetroot and cheese if allowed.

Your base would probably be soy, then add vegetables like shredded carrots, mushrooms, onions, seasonings etc etc. You will need a food processor. But there should be some good ideas at this website. Try foodtv.com or allrecipes.com

very vague, I suppose you can adjust to taste.
to mashed potatoes, add, grated carrot, onion garlic,shredded leek and a tin of mixed bean salad, (chick peas, kidney beans, etc.) Add salt, pepper and fresh herbs, like parsley coriander. I wouldn't put dill or tarragon.
Mix together, using an egg to hold it all. Pass through flour, followed by beaten egg, and finally breadcrumbs.
Bake or fry.

mmmm, very vague, don't complicate it. if you love mushrooms , add them in, if you hate garlic leave it out.
And good cooking is like good sex, take it easy and experiment!!
