Beef Fajitas
1 orange, juiced
2 limes, juiced
3 tablespoons canola oil
2 garlic cloves, minced
1 jalapeno, seeded and minced
1 tablespoon fresh cilantro, finely chopped
1 teaspoon cumin
1 teaspoon salt
2 1/4 pounds skirt or flank steak, trimmed of fat
1 green bell pepper, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 red onion, thinly sliced
Guacamole,
Salsa
12 flour tortillas, warm
In a small bowl, whisk together marinade ingredients. Place steak in a shallow container, and pour marinade over it. Refrigerate, covered, 8 hours or overnight to tenderize meat.
Drain the marinade from the meat. Grill the steak in a ridged grill pan over medium-high heat for 4 minutes each side. Transfer the steak to a cutting board and let stand.
In the same pan with the steak juices, add the bell peppers and onions. Saute the mixture for 3 minutes until the vegetables are limp. Thinly slice the steak against the grain on a diagonal.
Spread some guacamole on a tortilla, top with a few slices of steak, peppers and onions and salsa. Roll up the tortilla to enclose the filling.
May also serve with sour cream and shredded cheese.

Fajitas...my family loves these
feeds 6-8 or leftovers for next day

INGREDIENTS
4 boneless chicken breasts sliced thin or 2 LB's flank steak sliced in thin strips
6 limes, juiced
4 green onions, chopped
6 cloves garlic, minced
1/4 cup and 2 tablespoons chopped fresh cilantro
1/4 cup vegetable oil
1 teaspoon red pepper flakes
1/2 teaspoon ground coriander
2 bell peppers(green or red) cut in half lengthwise and 1/4 in thick
1 large onion cut in half and sliced 1/4 in thick
DIRECTIONS
In a medium bowl, combine the lime juice, green onions, garlic, cilantro, oil, red pepper and coriander. Whisk until well blended.
Pour mixture over your favorite sliced meat, cover, and marinate for 12 to 24 hours.
To Cook
drain marinade...put meat and vegetables into large frying pan or wok and cook 15 minutes.. till vegetable are al-dente or cooked to taste. Ready in 15 minutes
Warm tortillas 2-3 per person
serve with diced tomatoes, salsa or pico de gallo, sour cream and guacamole also good with mexican rice or refried beans

go to the meat department ask for the fajita meat or chicken then get the fajita seasoner then add onions tomato or tomato sauce then add green bell pepper and fry it all together tatatta.... you have fajitas!!!
