Can you serve rottini with red sauce? I know it's usually used for cold pasta salads but is it ok to serve it hot with red sauce over the top???

Rotini is made with the same ingredients as any other pasta. The only difference is the shape. Because they are a little thicker and hardier, you are going to get more of a noodle flavor, but that should not affect the dish all that much. I actually make a rotini and red sauce bake with mozzarella and Parmesan cheese on top. It turns out great every time. I think baking it is the key, as it soften the inner part of the noodle a little more.

People in my circle serve rotini with red sauce and parmesan cheese all the time (maybe we're just a bunch of culinary ignoramuses, though - I don't know if any "official" chefs would disapprove).

What I've found is rotini and cheese sauces doesn't work out too well.

Actually rottini it great for tomato based sauces as the shape of the pasta helps hold the sauce on the pasta.
