In my opinion, if you soak the chicken legs in ice cold salt water in the refrigerator first it will draw out the blood and give the chicken a better taste. Let it set in the water for a couple hours then rinse it well and pat it dry.

In a bowl pour a cup or more of buttermilk

In a plastic bag place white flour, salt, pepper and paprika

dip the legs in the buttermilk then toss in the bag of flour..

have ready a frying pan big enough to hold the legs and fill with peanut oil (NOT TOO HIGH UP OR IT WILL BOIL OVER when you place the chicken in the pan) let it get hot and turn down to med..then fry the chicken until browned turning every 6 minutes or so...but keep the temperature high but not too high so it will not burn...jab with a fork in the biggest piece to make sure no pink juices come out. it usually takes about 20 minutes or so. .

drain on paper towels...

This way is the best!!! first off take out the chicken legs and rinse them with a bit of water, pat dry them and salt them. Then get yourself a few paper bags doubled or tripled and add to the bags a bunch of flour , pepper and garlic powder. put the chicken legs in the bag and roll up the top of the bag and shake for a good 20 sec. then stick the whole bag into the fridge and get the pan and oil warmed up(med to med hi) and use corn oil if you can tho any vegey oil should work. the coolness of the fridge helps the flour bond better with the chicken. OK so once the pan and oil have been heated up stick the legs in the pan the more they are covered in oil th faster they wil cook but always cook for a minimal of 25-30 min untill a nice golden dark brown color comes flip them maybe 4 times and enjoy.

1) Marinate overnight in buttermilk.

2) Drain the chicken and season with salt, garlic powder, paprika, and cayenne pepper.

3) Dredge chicken in flour.

4) Melt shortening (yes, shortening) in a pan... use enough so that it will come halfway up the chicken when you put the pieces in.

5) Cook the chicken until golden brown on each side, which will take about 10 minutes per side if you keep the shortening around 325 degrees. The chicken should reach 180 degrees on the inside.

6) Drain excess oil from chicken and serve. Mmm.

Have at least a 10" skillet put a 1/4 " of oil in it, heat to medium heat, on about 7 of an electric stove. Toss the legs in flour and when the oil is hot gentle lay them in it and season the side you see. Give it 10 minutes and turn them over, season that side now. Put the lid on the skillet and turn down the heat half way for about 10 minutes. Then take the lid off, turn the heat back up to where it was when ya started[med/high] and turn the legs. This is when I usually season mine again, give it at least another 15 maybe 20 minutes , but look at the legs!! If the get to brown turn them or take them out and put them on a rack w/paper towels under it. If ya just lay them on the paper towels then they are sitting in the grease you want off of them. Always use a rack when draining fried foods!!

Ok listen up.
The best way is to Boil with a Basic stock in water.
Then once boiled drain the water and leave to cool down a little bit. Normally about 5-10 minutes. Just enough for the excess water to evaporate.

Ingrediants Plain flour, egg, bread crums

Then take the chicken legs and cover in plain flour.
Then beat eggs in seperate bowl and dunk the legs in the egg, making sure you cover the whole leg with egg.
Get a new bowl with bread crums and cover the entire leg with bread crums and there ready for cook.

Use vegetable oil or a Deep Fat Fryier at 160c degrees. for about 10-15 minutes. They will turn out like professional KFC legs.

Soak the legs in buttermilk, for at least a 1/2 hour.
Pat them dry with a paper towel.
Dredge them in seasoned flour, then into blended eggs, then back into the seasoned flour(salt, pepper, dried sage, dried basil). This gives them a nice thick coating.
Deep fry them in peanut oil, or corn oil. Not vegetable oil, because it burns too quickly.
Drain and serve hot with some coleslaw, and mashed potatoes. Yummy!

I usually add salt and pepper to some flour, then coat the chicken legs with the flour, tap two legs together to knock off excess flour.
Then fry in hot oil in a skillet, they are done when the juices are clear with out any blood showing.
hope this helps, you can also add poultry seasoning to the flour.

flour and corn meal mix... with salt/pepper..dampen chicken and roll in mixture.. fry in olive oil or your choice of oil at approx 375 deg... cover with lid-- keep turned...

also you can deep fry same way but use about 400 deg ..
