I lost a bet and so i owe some baked goods. They don't have to be cookies......

Melting Moments

1 1/2 cups (210 grams) all purpose flour
1/2 cup (60 grams) cornstarch (corn flour)
1/4 teaspoon salt
1/4 cup (30 grams) powdered (confectioners or icing) sugar
1 cup (227 grams) unsalted butter, room temperature
1 teaspoon pure vanilla extract
Topping:
1 cup (110 grams) powdered (confectioners) sugar, sifted

In a medium sized bowl whisk together the flour, cornstarch and salt. Set aside.

In the bowl of your electric mixer (or with a hand mixer), cream the butter and sugar until light and fluffy (about 2 minutes). Beat in the vanilla extract. Add the flour mixture and beat until incorporated. Cover and refrigerate the dough for at least one hour or until firm.

Preheat oven to 350 degrees F (177 degrees C) and place rack in center of oven. Line two baking sheets with parchment paper.

When dough is firm, form into 1 inch (2.54 cm) balls and place the cookies on the prepared baking sheets spacing about 1 inch apart. Bake for about 12 - 14 minutes or until the edges of the cookies start to brown. Remove from oven and place on a wire rack to cool for about 5 minutes.

Meanwhile, line another baking pan or tray with parchment or wax paper. Sprinkle about half of the confectioners (powdered or icing) sugar onto the bottom of the pan and then place the slightly cooled cookies on top of the sugar. Put the remaining sugar in a fine strainer or sieve and then sprinkle the tops of the cookies (or you can just roll the cookies in the sugar).

These cookies store very well. Place in an airtight container between sheets of wax paper and they will keep a couple of weeks.

Makes about 3 dozen cookies.

Cookie brownies! They're easier than cookies and just as tasty. Just make the cookie dough as usual, spray a sheet pan with non-stick cooking spray, and spread the dough on the cookie sheet. Then put it in the oven at 350 degrees for about 17-18 minutes. Once they're cool, cut them into bars. Yummy and easy!

Make Splenda cookies. They taste like normal ones. Heres the recipe:

1/2 cup whole almonds
1/2 cup canola oil
3/4 cup SPLENDA® No Calorie Sweetener, Granular
3 tablespoons sugar
2 large eggs
1 large egg white
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/3 cup nonfat dry milk
2 teaspoons anise seed

1.Preheat oven to 350 degrees F. Spray cookie sheet or jellyroll pan with nonstick cooking spray; set aside.
2.Spread almonds in a shallow pan and toast 7 to 10 minutes. Remove almonds from the oven, cool and chop coarsely.
3.Mix oil, SPLENDA® Granular and sugar together in a large bowl. Add eggs and egg white, one at a time, mixing well after each addition. Set aside.
4.Combine flour, baking powder, baking soda, nonfat dry milk and anise seed in a medium bowl. Pour flour mixture into the oil and egg mixture and stir until blended. Add almonds and mix until just blended.
5.Divide dough in half. Roll each half into a log approximately 3 1/2 inches wide by 12 inches long. Place the logs on the prepared sheet 2 inches apart.
6.Bake 20 to 25 minutes. Remove from oven and cool for 5 minutes. Slice the loaves with a sharp knife into 48 slices, approximately 1/2 inch wide.
7.Cool and store in airtight containers. Cookies will stay fresh up to 5 days

Why not make cupcakes or brownies instead? You could chocolate cupcakes with vanilla frosting. Or chocolate chip brownies. Just go to a store and buy a box and make them. But if you want to do cookies I recommend chocolate chip.

chocolate chip cookies are the bomb you should make those and mybe even some m&m cookies your friends or whoever you were betting with will love 'em if you cook 'em right
