Shark requires no special treatment other than a brushing of olive oil on both sides to keep it from sticking to the grill. Use care when turning as it gets flaky toward the end of cooking. Serving suggestion...top with a generous spoonful of mango chutney...bon appetit!!!!

it flakes easily so I put a small pattern stainless grid under each piece to keep it from dropping in. I mix tequila, orange juice, butter, fresh cracked paper and a dash of curry together in the microwave until it is thin then add a finely crushed mint leaf and some fresh lime juice and brush that on while the shark is getting what it deserves as a predator .....then I feast on it,,, for turn about is fair place and good shark is hard to beat fixed that way especially with a good pino griegio hope you life it

Make sure you soak for at lease an hour in milk. If it's shark steaks you doing, make a great sauce out of lemon, tomato sauce brown sugar and coffee (strong), Cook till almost done and paint the sauce on.........so darned good you'll have to slap your grandma!!!!!!!!

Brushed with olive oil and sprinkled with lemon pepper is the way I like it. You could use any herb you enjoy the most. Cooking fish....is always 10 minutes or less per side, per inch thickness of fish.
