Question for you is do you want to be known for a bar and grill or be known as a bar. Do you want to attract alcoholic druggies that will put your liquor license and establishment and you in danger or a more levelheaded maybe young crowd or business crowd that like to eat especially honest hard working men, they want to eat!! I would not worry about losing profit. Just purchase food at a minimum at first so the least popular, and most popular items can be determined and you won't be throwing away a bunch of waste.

You need to start with a business plan that will effectively start your business and also supports growth. What do you want to own? A bar or a bar and grill, its a simple decision. If you plan on running a bar and grill, start with the bar and grill. You can always start with a simple menu and make changes later. Look at your location and the benefits it would have on business. In Minnesota, a bar cannot be open on Sundays unless a certain percent of the profits come from the sale of food. So it would make sense in Minnesota to serve food so they can be open for Sundays during the football season. Also consider your facilities, if you start with only a bar and then have to build a kitchen later, that could disrupt service and you may have to close for a period of time during the remodeling.

Too bad you can't haul a BBQ (the big kind) into the parking lot and have a terrific opening! Or can you?
If you're going to end up with a grill later, you'll have missed the draw of your business being new, drawing new customers in larger numbers. That is, maybe a much smaller population will be first-timers after the business is established if the only attraction is the grill.
If you do open the grill later, I hope you offer beer specials with it!

First you 2 need to decide if you're opening a bar or a place to eat that serves drinks.
Personally, I'd start off with just the bar. Your profit margin's going to be strongest here. Get comfortable with your space and your clientelle (as well as your health inspector, gargabe collector, distributors and purveyors). Find out what your clientelle wants to eat so you can better develop your menu. Have some snacks available that don't involve cooking. Where I live you can get a book of delivery menus at bars that don't serve food.
It's a big investment and responsibility to get a grill up and running (staff, equipment, supplies, dishes, perishables) properly. Really sucks when all that money gets wasted. Start off simply, offering pressed sandwiches, burgers and hot dogs, and snacks with minimal preparation. Take the time to find a good cook and don't forget you get what you pay for. There's time to get fancy much later.

Question: what makes your bar/grill different from anything in the area?
We have a couple around here and they have given it full names, like The Stadium Pub or Masse's, so I wouldn't worry about the grill portion, but I think you should offer it right from the get-go

You should have some kind of food to start out. Weather it be just bar food, or you get the grill and close the kitchen early.. People who are drinking love food to munch on!

Food is always a great partner for alcohol. Maybe decide on a few signature, unique dishes (just appetizers are fine) that will attract patrons to your establishment rather a full menu. This way people who are hungry (what guy isn't hungry?) can eat, drink and be merry. Good luck in your endeavor.

Start with a small grill menu, like hot dogs and hamburgers. Then see how that works. You can expand the menu later when you get requests. I always have to eat something salty like potato chips or pretzels. Good luck.

I don't know where you live but people eat food and drink.
are you opening a dive bar a bar where all the drug dealers and crack heads are going to hang out all day all. well they need to eat too
And if you have hookers call me up and give me the address i would love to be at the grand opening
you and your partner should have talked about this before you two bought the place
