I think that Newton was ascribing his discoveries, including the principle of gravity, to the fact that he researched much of his work on the discoveries and teachings of other very eminent men such as Galileo , Copernicus and da Vinci. Thus by using their work as a starting point he was able to add and improve on it. Therefore he was 'standing on the shoulders of giants'.
I think your second quote could be an answer to the (I think) Roman quotation where someone advised Julius Caesar that he would be safe because he had guards and his answer was something like 'Yes I have guards, but who guards the guards?'
Basically he was saying that even the guards could be corrupt so being given power should also mean that the power should be subject to scrutiny.

Books we read, teachers who really want us to do the best, I think the shoulders of giants are the authors who write the books, the teachers who really care about us. People who inspire us, who make us want to learn, to find out things.
Ever read a book and had a flash of understanding, been able to see things as you had not done so before?

IMO I translate it as, I never would have gotten to the place that I now am in life, be it successful in business or family life without the support and encouragement of those whom I have chosen to surround myself with.
Thanks for asking.

I thinknewton was blindsided by the accolades he received @ he science convention, his quick wit & response , after overhearing compliments beforehand was modest & magnamious in responding to his peers admirations
