Peanut Butter and Jelly sandwich...here's the trick tho: put a little peanut butter on both slices of bread, then the jelly. That way the jelly wont leak through the bread :)
Almost any piece of fruit will make it to lunch...I'd go for a banana myself.

You can freeze a Capri Sun or other juice box...and in addition to water, drink that or eat it as a slushy at lunch. What I do is freeze it solid, the wrap it in paper towel, then place my little bag of sliced cheese or 2 sticks of string cheese next to the paper towel. wrap it again. Then on the other side of the drink, place a baggie that has a small serving of 3 bean salad or salsa mixed with black beans. Then I wrap another towel around all three things...cheese, juice, bean/salsa...and the cold drink keeps those items really fresh. Pack some crackers for the cheese, a plastic fork for the salad or some tortillas for the salas and bean mix. Bring a cut up apple or a banana and some carrot sticks. You'll be drinking water all day probably so the juice will be a sweet treat!

I'm a veggie too and was a cub leader, so have supervised lots of these . Being not too fond of sandwiches either (plus they get all mushy), your best bet is to bring trail mix (nuts, raisins, etc.) as well as some fresh fruit and LOTS of water. You want to stay healthy and not lose any of your electrolytes while you're out there and you also want to have the energy to properly lead :) Taking some tasty crackers may also help. Have fun!

Just buy an ice pack at the supermarket and pack it with what you normally would take for lunch. That will keep any rice and bean salad, yogurt or veggie salad fine until noon.Take some dried fruit and nut mix with you as well.

i would make egg salad and take some lettuce leaves with you and you can eat that. it's not like it is summer time or anything unless you are in Australia and for get the lettuce wraps and just take a egg plant and a jar of honey and three limes
you are going on a field trip don't want to come back with scurvy on any thing like that

1 flour tortilla
one cup of rice
one can black beans
and one packet of salsa
Add rice and beans to tortilla in desired amount and roll tortilla. Add salsa when ready to eat. MMMMMM good
Army Surplus stores can provide veggi meals ready to eat that come with their own means of heating that requires a little water.
Just ask for a vegetarian MRE.

Make a veggie wrap. Take a soft shell and add your fav veggies. Or you can make a lettuce wrap.
