Venison Meatballs

1 pound ground venison
1/2 cup onion, finely minced
1 cup bread crumbs
1/3 cup Parmesan cheese
2 teaspoons dried parsley
1 teaspoon garlic powder
1/3 cup milk
1/3 cup Italian dressing
1 large egg
1 teaspoon salt
1 teaspoon black pepper

In a large mixing bowl, beat egg with milk and Italian dressing. Add bread crumbs, Parmesan cheese, parsley, garlic powder, salt, pepper and minced onion; mix well. Add ground venison and blend mixture well with your hands. Form into meatballs (about the size of a golf ball) and place on baking sheet. Bake in oven at 375 degrees F for 45 minutes to 1 hour.

Serve with pasta and your favorite tomato/marinara sauce or however you traditionally eat meatballs!

Ground Venison makes delicious chili. My Grand Father use to sell it to every restaurant in his town. The spice he used was bought in Mexico, then brought up to the Mid-West. It's a family secret, sorry. Hint: Cumin.

My wife makes a killer enchalada with venison. you can use it pretty much anyway you use ground beef.

Mostly, don't over cook it, it';s not beef. Venison doesn't have much fat in it, so if you are cooking something special, you may want to add a piece of bacon ot something to help keep it moist!

Take mashed potatoes and mix with the venison and deep fry for fried cakes. You can do the same with squirrel meat.

I use mine in spaghetti and chilli primarily although I have had great luck making meatloaf out of it, and meat pie, and have made it into burgers. Try whitetails.com they have a recipe section. Happy Venison!!!

Make chili out of it. Also, you can put some sage, coarse ground black pepper and onions in it with some tomato sauce (ketchup works) and make sloppy joes. Be inventive. Use your imagination.
