At a year old- they can understand a lot. They can not really talk yet- but they understand more. Sign language is a great way to help them communicate with you. My daughter is from another country- she was never even exposed to the English language until she was 11 months old. She can tell me eat and more. - She likes to tell me more when she is eating something she really likes, and she will shake her head "no" when she is done.
It is fairly easy to teach them when they are around a year old.
You can go to babycenter.com and they can tell you week by week what your child should be doing-
Good luck

A lot of research suggests that children's understanding and processing of visual information develops more quickly than the auditory system especially for language...this isn't to say that hearing isn't extremely important. I am a speech-language pathologist...can't tell you how many children I have seen with poor speech and language skills due to chronic ear infections. Anyway...getting back to visual info....I had a graduate school professor who strongly advocates for using sign language when interacting with toddlers...they can connect the visual representations with the auditory word and learn to recognize the words and their meanings more easily......always try to combine visual, auditory. and tactile kinesthetic information together when interacting with your child.... We all learn better that way.

Children are sponges...they understand the supra-segmentals of language more than the meaning of the words......tone, inflection, facial gestures...etc. But the more explorative your child is, the more he will learn about his environment.....experiencing his environment is key.

http://www.asha.org is the website for speech-language pathology...there are links to many resources for parents there. Language and cognitive development is very predictable and well documented...so most parenting websites will have developmental milestone information to give you more detailed information.

Children are trully amazing. Not only is he learning new things everyday, but he senses things just by watching you. Amazing, because he learned that on his own, no one had to teach him that. Touch is one of the best ways for learning. He will learn alot about the world around him, just by touching..Aren't kids wonderful!!!
