'Kebab' (or 'kebap') just refers to roasted or grilled meat, and there are literally hundreds if not thousands of dishes under this generic category. So your question is like asking about 'meat sauce'...
If you're referring to what commonly goes under the name 'kebab' in the UK, and is normally scoffed after ten pints at the pub (and consequently often puked all over the sidewalk), then please know that this is but a very poor and completely incorrect imitation of 'döner kebap', although you'd be hard pushed to tell they're even related. (In fact, proper döner should have nothing but thinly sliced meat and a very small dose of hot pepper sauce and some spices, served inside half a loaf of white bread or a thin-bread wrap - visit places like Turkey, Lebanon, Syria or Iran to experience the real thing.)
Hence the short answer to your question is, there is no such thing as a 'real' kebab sauce.

Depends what your tastes are. You could mix mint sauce with salad cream for a sauce. Or just make your own chilli sauce, for which there are obviosly hundreds or recipies, depending on your taste.
