The Owl is wise because of it's nocturnal vision and the patience to pick their prey.
The owl also allows itself to regurgitate the bones of small mice wrapped with the hair that the owl has eaten. This allows the owl from protecting itself from injuring the digestive system. I know a little about the mighty owl because it was my highschool mascot.

Owls are among the few birds whose eyes are both on the front of their head, as opposed to one on either side of the head. This resemblance to human beings gave owls the reputation for wisdom.

Probably has something to do with greek mythology... owls were sacred to Athena, the goddess of wisdom.

Dates back to pagan days when they were thought to possess powers that were beyond comprehesion as they could fly through the air and you would never hear them, thus the thought they were magic of sorts. So they were deemed wise as they knew the secrets of silent travel.
