I have been trying to find a recipe for chicken wings cooked in a pressure cooker (and possibly finished in an oven or broiler)...any recipes or websites would be much appreciated!

Thanks!

As long as your roommates know how to use a pressure cooker and stick to the rules concerning the use of one, it is safe and quick. If wrongly used [temperature too high, filling it to the brim with food/water, etc.] it can explode but will probably first blow of steam [and whatever's in there!] through the safety valve. I often use a pressure cooker and never make whole chicken any other way anymore. The chicken, some really good spices, onion, garlic, white wine, water - pressure cook it for only about 20 minutes for a 2.2lb [1kg] chicken, then put some melted butter on the the skin and crisp under the grill. Yummy!

I also love my pressure cooker and have difficulty finding some of the recipes I want. I found this one and think you could easily adapt it. It's a slow-cooker recipe. I'd make it like it says, cooking until done and then possibly brown them under the broiler.

If you have a Sam's Club near you I've found their Tyson Tequila Lime or the honey barbecued to be excellent and FAR less work. They're fully cooked so you just heat them. I just bake them a whole lot longer than they tell you to. The Tequila lime aren't spicy. Serve with salsa.

Heres my recipe:

Tangy Chicken Wings
1/2 cup tomato sauce
1/4 cup oil
1 envelope good seasons zesty italian sald dressing mix
2 lbs chicken wings, separated at joints, tips discarded
1/3 cup cider vinegar
1 tablespoon hot pepper sauce
Mix tomato sauce, vinegar, oil, salad dressing mix and pepper in large bowl. Reserve 1/4 cup marinade; refrigerate. Add chicken to bowl; toss to coat. Cover. Refrigerate 4 hours to marinade. Drain. Heat broilder. Place chicken on rack of broiler pan. Broil 4 inches from heat 16 to 20 minutes or until chicken is cooked through, turning brushing occasionally with reserved 1/4 cup marinade. Discard any remaining marinade. Makes about 1 1/2 dozen.
