I don't know about United Airlines' swimming portion of the flight attendant training but at another major airline they use a large pool for the training. They talk about the procedures and proper usage of the life preserver. Also, they will have emergency life raft in the pool and train how to get people into the raft and use the survival gear. At that airline, they gave written and performance tests for the swimming portion of the training.

They hand you a seat cushion and require you to be able to hang onto it for about 5 minutes. There is no swimming test, its just a "are you too retarded to drown with a life preserver in your hands" test.
