How long after her period is it safe to have unprotected sex and not risk pregnancy??

Her period isn't what you should be worried about. It's when she ovulates (that's when her ovaries release an egg each month). To be very safe, you don't want to be having unprotected sex for about a week before ovulation and at least a day or two after.
The "typical" cycle (and no woman is typical, mind you) is 28 days, with the first day of her period marking the first day of her cycle. Ovulation "typically" occurs around day 14 (or two weeks after the first day of her period).
A normal cycle can be much longer or much shorter, though. And some women will ovulate slightly earlier or later in their cycle, even if it's a typical 28 days. And -- this is kind of important -- the second half of a woman's cycle (after she ovulates) tends to be between 11 and 15 days, no matter how long her cycle is. So, say your girlfriend has a 35-day cycle: She is likely ovulating somewhere between day 20 and day 24, not day 14.
Google "natural family planning" if you want more information about how to determine when a woman is ovulating. Temperature-charting, calendars, checking cervical mucus, etc., are all explained on tons of sites -- and are all very good ideas if you're serious about going the no-birth-control route.
And, keep in mind that even when couples do everything right, pregnancy still occurs. Our bodies aren't always as predictable as we'd like.
