Man's worst fear, a frothing chicken with that "I'm gonna rip out your liver and shove it down your throat" look in his eyes coming straight for you. What do you do?

That's honestly never been my worst fear, but if one happened to come straight for me frothing at the beak I'd probably run. Assuming I can run faster than a chicken. If I didn't have time to run...I don't know. Maybe I'd threaten to fry it or something.
My advice is if you regularly come in contact with rabid chickens then you may want to be examined yourself. I've heard it's very contagious and/or infectious. Mad chicken disease would be a terrible thing to start an epidemic.
p.s. what do rabid chickens look like? Other than frothing at the beak with murder in their eyes, of course. Does something happen to the feathers, maybe, so that this disease would be more visible from a distance?

RABID is a term for animals with canine teeth. Most probably the chickens must have been fed with raw meat!!.

You are in no danger! Only mammals get rabies.
