30 inches is the standard height for most desks and if this will be a desk area also, you will probably want to maintain something in that range. That is not a hard an fast rule. If you are above average in height, 31 or 32 could work better for you.

If you can, place your sewing machined on your kitchen table to see if that's comfortable. It's about 30 or 31 inches high also.

If you want to incorporate a standing work surface, 36" as with the counter tops in your kitchen would be standard. You can do a "drop down" in your work surface to sit your sewing machine in so the working surface of the machine would be at the same level as counter top surface. You would be able to make your entire work surface the same height this way and still have your machine the height you like working.

Again though, this is not a hard and fast rule. Compare the heights of your tables or bathroom vanity and kitchen counter and you will find a height you think may work best for you.

this is greatly affected by the size of the table, but since you say you want them on three walls I could assume you are looking at about 24 to 36 deep this being the case I would say 30" tall. If they were for cutting only then 33 to 36 would be fine for an average height person.

what it really comes down to though is what are you comfortable with. your kitchen counters are 36 and if you sew primarily clothing then you do not need to deal with as much fabric and with widths and lengths you would use for drapes and upholstery. So a deep counter isn't as important. You can always pick a height you are comfortable with to cut and layout, then get a taller stool or chair for the actual assembly.

Hope this helps
