Ingredients:

2 cups - self-rising flour
3 eggs – separated (large)
3 cups of buttermilk
3 heaping tablespoons of confection Powdered Sugar
2 ounces of sour cream
1 tablespoon of baking powder
½ teaspoon of vanilla extract
Non-stick cooking spray

Utensils Needed:
Pancake griddle
Spatula
Large mixing bowl (3 to 4 quart)
Small mixing bowl (1 quart)
Mixer
Sifter

Directions:
Preheat pancake griddle to 400 degrees
Sift flour into large mixing bowl
Add powdered sugar
Add baking powder
Add vanilla extract
Add sour cream
Add three eggs yolks
Add buttermilk

In a separate bowl, beat egg whites into a meringue and set aside
Mix ingredients of large bowl until ingredients are well mixed with no lumps.
If necessary, add a little more buttermilk just until batter pours out of a large spoon or drips off the mixer beaters continuously, not in lumps
Fold in the egg white meringue

Test the pancake griddle for the proper heat
Lightly spray griddle with cooking spray
Quickly spoon batter out to make 3 to 4 inch pancakes
Allow pancakes to cook until golden brown (usually 30 to 60 seconds), then flip.

The temperature of the skillet is the most crucial factor in the success of the pancake. The skillet must be hot enough that water droplets dance on the skillet and smoke rises from the skillet, but must not be any hotter. The chef recommends that you wipe a skillet that is too hot with a wad of wet paper towels, then allow the skillet to smoke before proceeding.

If the pancakes turn out white with a brown ring around the edge, then your cooking surface is not hot enough. This is a common mistake. Note- you may want to wait a minute or so between batches to allow the griddle to reheat.

Okay, to to begin with I hate making things from a box but my husbands mom turned me on to this. At the grocery store you can find a pancake mix by the name of crusteaz (I think that is how you spell it). Now the recipe on the box calls for 1 to 1 mix to water. I use 1 part mix to 1 part Buttermilk, I also add an egg. If you want to spice things up you can make banana pancakes by adding, of course, bananas, cinnamon, and a splash of vanilla. That always turns out good.

Buttermilk pancake mix, any kind. Just add water. When you start to see little bubble pop up through the batter in the frying pan, flip them, cook for another minute and you're done.

The first few pancakes never come out right for me, the last few are perfect every time.

Double Chocolate Brownie Pancakes

2 cups pancake mix
3 T. unsweetened cocoa
2 T. granulated sugar
1 1/2 c. water
1/3 c. walnuts
1/4 c. semisweet chocolate chips

Combine pancake mix, cocoa and sugar in large bowl. Stir in water with wire wisk until large lumps disappear. Add walnuts and chocolate chips. Stir until evenly mixed. Let batter rest for 5 minutes. Cook according to package directions.

These tips apply to any pancake batter or mix; store-bought or home made.

Make sure your ingredients (eggs, milk, buttermilk) are at room temp before mixing your batter.

Don't over-mix your pancake batter. Use a whisk. Leave those lumps in there!

Let the batter stand for 5 minutes before using.

Don't push the pancake down with the spatula after turning it. This makes them dense.

listen i know u said no cooking websites, but no mix will give u the same pancakes as ones on food websites. they are about 10 times better. just look one up. i agree do not overmix

Krusties blueberry pancake mix. I love it. I recently tried Bisquick pancakes & was surprized I like them too. Sorry don't have a homemade recipe. My mom use to do it, but I haven't.

Probably the best would be PAN-Kits pancake mixesnice and simple but when you mix it do it with a whish they will come out fluffy.
