Sauté some bell pepper, onions, and garlic in a little EVOO in a non-stick pan, then add 1 beaten egg with three beaten whites. Add a little black pepper, sweet basil, and just a pinch of salt. Sometimes I add a broken up slice of pre-cooked bacon or some Hormel turkey pepperoni to give it just a little zing.
Once it looks like the bottom is pretty much cooked and the top is coming along, fllp it over. Add some shredded cheddar cheese and a little sprinkle of Parmesan, maybe a little swiss, too, and then fold it over and serve with buttered toast and either coffee or hot cocoa on the side.
Yummy, filling, and not too many calories or fat grams, if you're careful.

Peach French Toast Bake
Cooking spray
1 large whole-wheat baguette (about 8 ounces)
4 whole eggs
4 egg whites
1 cup low fat milk
1 teaspoon vanilla extract
5 cups sliced peaches, fresh or frozen
1/2 lemon, juiced about 1 1/2 tablespoons
3 tablespoons brown sugar
1/4 teaspoon ground cinnamon
Spray a 9 by 13-inch baking pan with cooking spray. Slice the baguette into 1/2-inch slices and arrange the slices in a single layer in the baking pan. Whisk together the eggs, egg whites, milk and vanilla. Pour the egg mixture over the bread in the pan. In a medium bowl, toss peaches with the lemon juice and 1 tablespoon of the brown sugar. Scatter the peach slices evenly on top of the bread. Combine the remaining brown sugar and cinnamon and sprinkle over the top. Cover and refrigerate overnight.
Preheat the oven to 350 degrees F. Uncover and bake for 40 minutes.
Serving suggestion: Top with a dollop of vanilla yogurt, a drizzle of maple syrup and a side of Canadian bacon

Show: Paula's Home Cooking
Episode: Spring Brunch
1 loaf French bread (13 to 16 ounces)
8 large eggs
2 cups half-and-half
1 cup milk
2 tablespoons granulated sugar
1 teaspoon vanilla extract
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash salt
Praline Topping, recipe follows
Maple syrup
Slice French bread into 20 slices, 1-inch each. (Use any extra bread for garlic toast or bread crumbs). Arrange slices in a generously buttered 9 by 13-inch flat baking dish in 2 rows, overlapping the slices. In a large bowl, combine the eggs, half-and-half, milk, sugar, vanilla, cinnamon, nutmeg and salt and beat with a rotary beater or whisk until blended but not too bubbly. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover with foil and refrigerate overnight.
The next day, preheat oven to 350 degrees F.
Spread Praline Topping evenly over the bread and bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.
Praline Topping:
1/2 pound (2 sticks) butter
1 cup packed light brown sugar
1 cup chopped pecans
2 tablespoons light corn syrup
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
Combine all ingredients in a medium bowl and blend well. Makes enough for Baked French Toast Casserole.

Hashbrown casserole
32 oz oreida hashbrowns
1 tsp black pepper
2 tsp salt
1 can creme of chicken soup
8 oz sour cream
2 cups shredded cheddar cheese
1 small finely diced onion
mix all ingredients really well.....bake in generously greased 9x13 dish for 1hr 15 minutes at 325.....should be bubbly and golden
add crumbled bacon, sausage, or diced ham it you want meat in it. Serve with toast, eggs, or even pancakes.
It is also a wonderful side for supper with a meat.....you can bake the mixture in two smaller pans.....let one cool and freeze for later...it warms up and tastes just as good!!!

Stuffed french toast:
Buy a french loaf, slice in 2" thick slices--cut a "pocket" in each.
Stuff the poskets with cooked bacon & cheddar cheese, or cooked bulk sausage with mozzarella, or ham & swiss.
Dip each filled slice in beaten egg (both sides) and fry like french toast.
These are great for company, simple, and easy to "customize" for all eaters.
Kids LOVE them!!
