Shrimp with Cocktail Sauce Copyright, 2004, Ina Garten
1 lemon
Kosher salt
2 pounds large shrimp in the shell (about 30)
1/2 cup chili sauce (recommended: Heinz)
1/2 cup ketchup (recommended: Heinz)
3 tablespoons prepared horseradish
2 teaspoons fresh lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon hot sauce (recommended: Tabasco)
Cut the lemon in half and add it to a large pot of boiling salted water. Add the shrimp and cook, uncovered, for only 3 minutes, until the shrimp are just cooked through. Remove with a slotted spoon to a bowl of cool water. When the shrimp are cool enough to handle, peel and devein them. Keep cold until ready to serve.
For the cocktail sauce, combine the chili sauce, ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Serve with the shrimp.

Shrimp Cocktail
Ingredients
1 cup catsup
Juice of 2 limes
1 small onion, chopped
1/2 cup fresh cilantro, chopped
1 tsp. hot sauce
1 clove garlic, minced
2 pounds large shrimp, cooked and chilled
1/2 head of iceburg lettuce
6 - 8 parfait glasses
Lemon slices
Directions
Combine first 6 ingredients and mix well. Arrange a few iceburg lettuce leaves around inside of each parfait glass. Hang six to eight shrimp around the side of each glass with the large end of the shrimp in the glass and the little end hanging over the edge. Spoon about 2 Tbsp.of the sauce in the middle of each glass. Garnish with a lemon slice. For added zing; add some prepared horseradish to the sauce. Anybody can dump some shrimp in one bowl and some sauce in another and call it an appetizer. Here, the key is presentation so put on your chef's hat and really try to make these cocktails look nice.

For two:
one avocado, diced small chunky
one mango, diced small chunky
a dozen cherry tomatos, halved
a tablespoon of dijon mustard
a tablespoon of ketchup
a teaspoon of creamed horseradish (optional)
a tablespoon of honey
a tablespoon of limejuice
a tablespoon of chopped cilantro
a pinch of salt
a pinch of ground chili pepper
a pinch of celery salt.
Combine all ingredients and put in the fridge.
Take a dozen shrimp (in their shell or not) and drop into about two inches of boiling water. Let simmer just until the shrimp turn pinkish all over. Remove from hot water and plunge into ice water to stop the cooking.
When cool to the touch (peel and devein if necessary) add the the shrimp and the sauce together in a bowl and mix lightly until all ingredients are melded.
Pour into two large cocktail glasses, garnish with a slice of lime and some cilantro leaves.
Enjoy. My treat.

Frozen cooked, cleaned, shrimp with tails-on and thawed
Cocktail Sauce (see recipe below)
Fresh parsley for garnish
Fresh lemon slices for garnish
Place cocktail sauce in a martini glass. Place several fresh shrimp on the rim of the glass with the tails on the outside. Make one cut in each lemon slice starting at the center and cutting through to the outside. Place a cut lemon slice on each glass where you made the cut so that it stands up. Add a sprig of parsley and serve.
COCKTAIL SAUCE:
1/2 cup chili sauce or catsup
2 tablespoons hot cream-style horseradish
1/4 teaspoon sugar
1/2 teaspoon Kosher salt
1/2 teaspoon freshly cracked black pepper
2 teaspoons fresh lemon juice
4 drops Tabasco
1/2 teaspoon Worcestershire Sauce
2 garlic cloves, minced
In a small bowl, mix ingredients together to taste, cover and chill until ready to serve and to develop flavor. Makes 2/3 cup.

If you would like something a little different, here's another I like:
Shrimp Ceviche
Ceviche is typically made with red snapper that is "cooked" by the acidity of lime and lemon juice. This version is prepared with shrimp, which is first lightly cooked, and then marinated in the citrus juice.
1 pound medium-small shrimp, peeled and deveined
2 Tbsp salt
3/4 cup lime juice (juice from 4-6 limes)
3/4 cup lemon juice (juice from 2-3 lemons)
1 cup finely chopped red onion
1 serrano chile, ribs and seeds removed, minced
1 cup chopped cilantro
1 cucumber, peeled diced into 1/2-inch pieces
1 avocado, peeled, seed removed, cut into 1/2-inch chunks
In a large pot, bring to a boil 4 quarts of water, salted with 2 Tbsp salt. Add the shrimp and cook for 1 minute to 2 minutes max, depending on size of shrimp. (Over-cooking the shrimp will turn it rubbery.) Remove shrimp with a slotted spoon and place into a bowl of ice water to stop the cooking.
Drain the shrimp. Cut each piece of shrimp in half, or into inch-long pieces. Place shrimp in a glass or ceramic bowl. Mix in the lime and lemon juice. Cover and refrigerate for a half hour.
Mix in the chopped red onion and serrano chile. Refrigerate an additional half hour. Right before serving, add the cilantro, cucumber, and avocado.Serves 4-6.

lol It's not much of a recipe. All you do for cocktail sauce is mix horseradish and ketchup. That's it. Dunk your shrimp in it and you have shrimp cocktail...lol
