It would certainly work-- but it might be best if you upgrade to a 1080p capable set. The reason being, is that blu-ray is capable of displaying twice as many pixels as regular HD components. In essence, on a 1080p set, you will get twice as better picture than a 1080i set.
PS3 will look great on a 1080i TV but it would look twice as good on a 1080p TV.

At the risk of adding some confusion, you should be aware of the difference between what a TV will DISPLAY vs what it will ACCEPT as input. Many TV are called 1080p, and do display in 1080p, but as of now only a few actually accept the 1080p signal that a blu-ray player will put out. They take the 1080i and convert it internally to 1080p. If you are just getting a new HDTV, make sure it will ACCEPT 1080p as INPUT so that you will get the best result from your player.

yes it will even though the ps3 is capable of 1080p it is also backwards compatible with 1080i 720p 480p and 480i
