Tuna out of the can tastes great with a little good quality extra virgin oilve oil, salt and pepper and lime or lemon juice. Also try adding capers, cherry tomatoes, shredded carrots, red onions, black beans or salsa (not all at once).

OK - no mayo - no miracle whip. Try this one:
SIMPLE ITALIAN TUNA SANDWICH

1 (6 oz.) can Italian dark tuna
3-4 tablespoons extra virgin olive oil
1/2 small onion, chopped
1/4 1/2 stalk of celery, chopped
1/2 tomato, seeded and chopped
6 or 7 black olives, chopped or sliced thin
1 teaspoon balsamic or wine vinegar

.
1, Drain off the oil that the tuna is packed in.

2. Place the tuna in a small bowl. Add the olive oil, and break up the tuna, mixing it together with the oil.

3. Add the chopped onion, celery, tomato, and olives, and vinegar.

4. Mix everything thoroughly.

Will make 2 or 3 sandwiches, depending on type and size of bread slices.

Try olive oil, lemon juice, and salt and pepper to taste. If you want to get a bit more "exotic" you can also add sliced shallot, 1/2'ed grape tomatoes, artichoke hearts (the ones canned in water), and kalamata olives. This makes for a tasty Mediterranean tuna salad.

Use plain yogurt and spices (garlic, oregano, basil, lemon pepper) instead of mayo. I like mine with chopped ripe olives, onion or green pepper, but maybe that is too much trouble.
