I am interested in learning photography. I am an amature now with 3 cameras. Minolta maxxum 7000, Sony Cybershot, and Nikon Coolpix S6. I want more professional looking photos, and I am interested in going to Medium and to Large Format cameras to acheive this. They all look so different. I think Hasselblad is the most common for fashion photographers, but will I need to go that strong for wedding and portait photography? I've checked out many sites, ebay included, but want advise before spending $$$ on the wrong outfit. Thanks.

Fashion photographers don't use medium format cameras to improve image quality; they use them because huge negatives translate into huge print sizes - think posters for an ad-campaign. When they attend fashion shows for a magazine they simply use (digital) SLR cameras.
It's the same with wedding photographers: they use (digital) SLR cameras. A wedding photographer might use medium format for the formals or for a studio session, but only if the intended print size exceeds 16 x 20 inches.
Pros do invest in superb lenses however. For studio work they also have quite a bit invested in lighting equipment.
Your Cybershot and Coolpix are fun cameras but they can't match the potential of a Maxxum 7000. I afraid I'm not up on Minolta gear (currently Sony) but I've heard great things about the 28-75mm f/2.8 for weddings and I'm sure they have something like an 85mm f/1.4 for portraits.
I could recommend several Canon or Nikon setups if you want to transition to a dSLR, but before I ramble on perhaps you should consider if that's an option.

You mention that you have a Minolta maxxum 7000. If your looking for a good digital camera and have lenses already for this camera you might take a look at the new Sony Alpha 100 as it will take the same lenses as your minolta. You can also seasch E bay for the Minolta D7 or D5 camera those lenses will work with your current camera as well.

John Lewis staff can be quite expertise, their flagship store on Oxford Street, will have manufacturer representitives, and their employees often have interest in photography. That's about it. Sadly I've found that Jessops staff have been woefully incapable, and the manager of my local independent camera store (sadly also gone bust) knew far more than the whole of the Jessops payroll put together in my town. That in part is the reason Jessops failed, they were not good enough.

OMG's answer is correct.

Currently the Canon EOS 20D and 30D along with the Nikon D200 and now the D80 are the darlings of the fashion industry. These are realistic cameras to buy and are incredibly flexible as well as being user friendly.

There's a lot of professional photogs that use Canon and Nikon dSLRs.

Use what you already have to learn, adn by the time you're better at it, you will also know enough about it to decide on what else you're going to buy next!!!
