you are lucky to have these! Don't use them all. they should stay good for a couple of weeks. The ones you buy in the supermarket are usually a few weeks old when you get them!

The best way I know to use a lot of eggs at once is to make egg salad. Boil, cool, peel and chop the eggs and then add whatever you like -- much like what you would put in a chicken or tuna salad. Olives or pickles, onion, peppers, celery...whatever suits your taste! I add enough mayo for a good spreading consistency and then lightly season it with some Cajun seasoning or some garlic and salt. You can use regular bread, toast, bagels, buns -- whatever you have to make it as simple or as elegant as you like. For a small family, salad made with a dozen eggs may last 2 or three days. So, doubling or tripling that would last a few days for a larger family or it would be enough to share with your neighbors.

You can make a nice desert by making some meringue and spreading it into a bundt pan that has been greased and sugared (versus floured). Place your "cake" in a 350 oven for 40-45 minutes. You will want to place your bundt pan in a roasting pan with 4 cups of hot water in it. When your meringue is finished immediately invert it onto a heat-safe plate. Cool for 30 min.
While your meringue is baking you can prepare an apricot sauce to go over top. You will need 2 cups of water, 1 (6 oz.) pkg. of dried apricots, 1 tsp. cinnamon, and 1 tsp. lemon juice. Bring water, dried apricots, and cinnamon to a boil. Reduce heat and simmer for 15 minutes. Add the lemon juice to the mixture and liquefy the water and apricot mixture in a blender until fully pureed. Chill the sauce in the fridge.
Slice cake into portions and serve with apricot sauce over top. A typical meringue recipe calls for 10 egg whites...that's almost a dozen right there. Good luck!

you could try eggs and noodles:
Bag of med. width egg noodles cooked as directed. Crack
desired amount into a bowl, beat the eggs and pepper salt if you use it. Heat butter or margerine in large frying pan add eggs
scramble themadd egg noodles more butter and grated cheese iif you like.... It makes a good quick meal...
