I made an oven stuffer for dinner the other night (came out great) and as usual there is a ton of chicken leftover. I wanted to see if anybody had any recipes that would use up some of the chicken. I know the usual things like chicken salad and chicken pot pie... I was really hoping for some other ideas. Any great recipes would be greatly appreciated. Thanks :)

An Oven stuffer is a nice whole chicken the Perdue puts out that is really yummy and pretty inexpensive and can serve as a few meals. Great way to make good dinners on a budget.

Thanks for the ideas but I'm still looking for something a little different then the usual soups and common chicken recipes...i need some challenge! :)

Once the meat has been used in other recipes use the carcass for soup or stock

Not to sound stupid but what is an Oven Stuffer? I am being serious. I cook a lot but have never hear of that. Are you in the US?

OK, I assime you cooked a whole chicken. I just never heard the term oven stuffer. Sorry!

I use leftover chicken to make a really fabulous Chicken Pizza. You can buy great pizza dough from almost any pizza shop. They sell it frozen and you let it thaw, roll it out and top it.

I mix the chicken with BBQ sauce, toss it on the pizza, add some mixed cheeses, some corn, black beans and maybe some bacon. Then bake it. It's really different and good.

Or mix the chicken with a little sweet and sour sauce, put it on the crust, add some pineapple chunks and sprinkle on a bit of soy sauce and shredded carrots and bake it. YUM

******To the other poster,thanks for the answer. I don't watch much TV and I buy my meat mainly from an organic farm near my house so I never saw that kind at the store before. I feel stupid!

This is a great recipe that my kids love, it uses up any left over chicken, preferably white meat but any kind can be used.

Chicken Wraps- You mix about 2cups cooked julienned chicken strips, a box of Uncle Ben's chicken flavored wild rice mix, (prepare rice according to box directions and combine chicken as soon as rice is done cooking, add other ingredients except flour tortillas), 1/4 cup bottled ranch dressing mix and 1/2 cup shredded cheese, I use Colby or Monterey Jack or whichever you prefer. You will need a pack of flour tortillas, heat them on each side in a heated skilled coated with cooking spray, you can keep them warm on a plate by covering with a damp paper towel and aluminum foil. You pile about 2 tbsps of filling in center and enjoy! My kids love this, have been making for more than 12 yrs.

Did you make gravy? Hot chicken sandwiches are yummy.
Boil the carcass with a bay leaf and some peeled onions until the meat is falling off the bones. Strain the broth and pick out all the good hunks of meat. Add some onions, celery, carrots and potatoes, or just some rice, and you have wonderful homemade soup.

For heylistenuphere: an Oven Stuffer is a nice fat chicken, bred to be roasted and stuffed. The brand name is Purdue, and they are delicious.

In a oven safe casserole dish layer as follows:

Prepared stuffing (instant is fine)
Chicken cut into bite sized pieces
Velveeta or comparable soft melting cheese (optional)
Cream of .... soup (chicken, mushroom, or celery) spread over top

I bake this until soup and cheese stars to bubble and is hot through at about 350 degrees.

Whats great is everything is cooked so all you are doing is heating it through. It's easy, hearty, and a great dinner with just a veggie or salad.

There are soooo many things that you can do with your left over chicken. One of my favorites is of course Chicken Noodle Soup:

Chicken Noodle Soup

8 cups water
3 carrots (peeled and cut into thirds)
3 ribs of celery (cut into thirds)
1 yellow or white onion (cut into fourths)
1 Tbsp. salt
1 tsp. black pepper
1/4 cup chopped Flat Leaf Parsley
1 package Egg Noodles
Chicken Carcass

Take all of the chicken off the bone and set aside. Fill a pot with 8 cups of water and add the chicken carcass, cut carrots, celery, onion, salt, and pepper. Bring to a boil and let boil until you have a nice rich chicken stock. Remove the carcass and the veggies. Chop the veggies into smaller pieces and return to the stock along with your left over chicken. Add the egg noodles, and parsley. Bring to a boil once again until your noodles are done. Then serve with your favorite crusty bread.

Another great recipe for your left over chicken is chicken and dumplings.

Cheaters Chicken and Dumplings

1 Family Size can of Cream of Chicken Soup
2 eggs
3 cups All purpose flour
1/2 cup of milk
Salt and Pepper to taste

Mix the flour, eggs, milk, salt and pepper together. Using an ice cream scoop, scoop out balls of dough and place into a pot of boiling water or chicken stock. When the dumplings are done they will rise to the top. Remove and set aside. Once all of your dumplings are done, mix in a baking dish with your left over chicken and the Cream of chicken soup. Sprinkle the top with seasoned bread crumbs. Bake at 400 degrees for approximately 30 - 45 minutes or until the bread crumbs are browned and the soup is bubbling. Serve with your favorite bread or biscuits. Enjoy!

put the chicken in a baking dish and pour a can of cream of mushroom soup over it, a small amount of water, a dash of thyme and throw in a few veggies (onion, potatoes, carrots) then put a lid on it. Bake it in the oven until it is HOT and the chicken is falling off the bone. serve it with rice or mashed potatoes and dinner rolls.

I like to make chicken taquitos.Warm up some corn torillas in the microwave,then add three spoon of (warm)chicken to each torilla.Roll them up and fry them in a inch of vegetable oil. They cook really fast. Ready to eat.
If I have lettuce,tomatoes and cheese,I cut it up and put them in a side dish at the dinner table. We love it,hope this helps

chicken and pasta:

Boil and drain pasta. Place tomato alfredo sauce and milk in a skillet. Whisk until combined. Add chicken and simmer until the sauce is heated throughly. Serve chicken over pasta. Spoon additional sauce to taste. Bon Appetit!

Easy! You can just make some white rice . You make an easy vegi stir-fry and just add the ckicken with a bit of soy sauce (about 2 TBSP). Good Luck!
