I just noticed that this has snow peas, you can leave those out.

SAUTEED RICE WITH ALMONDS, CURRY AND GINGER
1 tbsp veg oil
1 tsp crushed garlic
1 ½ cups thinly sliced bok choy or nappa cabbage
1 cup snow peas
½ cup chopped sweet red pepper
1/3 cup chopped carrot
1 tsp ginger
1tsp curry
¾ cup chicken stock
4 tsp soya sauce
2 cups cooked rice
2 tbsp toasted chopped almonds
2 tbsp chopped green onion
In a large nonstick skillet, heat oil; sauté garlic, cabbage, peas, pepper and carrot for 3 minutes or until just tender, stirring constantly. Add ginger, curry, stock and soya sauce; cook for 1 minute.
Add rice; cook for 1 minute or until well incorporated. Place in serving dish and sprinkle with almonds and green onions.

Fried rice have many different varieties you can choose and use. Ham, beef, chicken, pork, turkey, just vegetables, ... etc. Eggs and peas are optional ingredients. You don't have to put them there. I do it all the times either with or without them. My brother even make fried rice with a touch of salsa.

Ingredients are:
2 cups of cooked rice (cooled completely in the refrigerator overnight)
1/2 chicken breasts, cut in cubes
1 stalk Green onion
1/4 teaspoon Salt
1 to 2 tablespoons Soy Sauce
Sesame Seeds (option)
2 tablespoons Cooking Oil

Peas and eggs are not crucial components of fried rice -- they're added as a cook's preference for taste or color. Find an easy recipe in your favorite cookbook or online source (such as http://www.allrecipes.com) and omit the ingredients you don't like...and even substitute with your favorite additions...like different vegetables or meat.

Just use any recipe for it and leave out the eggs and peas.

These will have many recipes... just omit the eggs and peas, they aren't necessary to CFR.
