Many larger restaurant chains have a commissary where they make and package their own foods and ship them to their various stores in bulk. They also order from food purveyors such as Sysco and buy food which is already prepared and just needs to be defrosted and cooked.

Smaller restaurants, such as ours would make crab cakes from scratch. However we still use the food purveyors for some pre- made items such as desserts.

Most restaurants don't really cook themselves anymore, for health reasons, but also because it takes too much time. They get everything ready and just re-heat them.
