with it. I would much appreciate hearing from people with first hand knowledge. Thanks a bunch! Oh, and just to ask two for the price of one, there were leeks in the box, too. How do you use them?

Somebody likes you! I can't even afford to buy bok choy
OR leeks from my local grocery store. But to cook bok choy,
Shred and use in stir fry. It cooks fast. And leeks: Cut off
the green part, its inedible. Using the white part only, slice
down the middle lengthwise. Soak in salted water and rinse
very well. It sometimes harbors small insects and a lot of
sand. Then slice and use as you would a delicate flavored
onion. They are delicious. Leek soup is sensational.

Bok Choy: from a CSA member: Bok choy: (the bok choy in the box was amazingly good!) 1 T oil 1.5 lbs bok choy 1 T light soy sauce 2 T chicken stock or water Heat wok over moderate heat. Add oil and then bok choy. Stir fry 3-4 minutes, until leaves have wilted a little. Add soy sauce and chicken stock/water. Continue to stir fry for a few more minutes, until the bok choy is done until still slightly crisp. I usually, like many of the others, use bok choy in stir fry. It is really yummy with ginger and garlic. As for leeks, there are a ton of things you can do with them. One thing, make sure you wash them really well. Split the white in half and rinse really well with cold water. You can pretty much use a leek anywhere an onion is used. They are a bit milder than onions and also make a great soup with potato. I also put them in salad in place of green onions.

I like cooking bokchoy with some sesame oil and garlic (stir frying it)
simple but delicious

I never cook with leeks
but I know that I love creamed leek soup

* Steaming about 6 minutes for the stalks, 2 - 3 minutes for leaves
* Stir-fry about 5 minutes for stalks, 2 minutes for leaves - the leaves should be just wilted and bright green.

Chinese Style Stir-Fry

1 clove garlic
1 inch ginger root
1 onion
1 red pepper
1 handful beansprouts
4 closed cup mushrooms
4 miniature pak choi
vegetable oil
soy sauce

Finely cut the garlic and ginger. Shred the other vegetables into think sticks or slices. Heat the oil in a wok and put in al the ingredients apart from the pak choi and soy sauce. Cook for 5 minutes. Place the pak choi on the top and allow it to steam for a few minutes. Mix thoroughly and serve sprinkled with soy sauce. It is lovely if you add water chestnuts and smoked / marinated tofu.

Leek and Potato Soup

Ingredients

2 leeks
1 medium onion
2 medium potatoes
vegetable stock
olive oil
salt
pepper
vegan margarine
soya milk


Peel the potatoes and chop into small chunks and boil them until soft.

Meanwhile peel and finely chop the onion and fry until soft in olive oil. Add the leeks which have been washed and finely chopped. Continue frying until the leeks are soft.

Once all of the vegetables are cooked put into a blender. Pour in half a pint of vegetable stock and blend until smooth.

Return to the saucepan and add 300ml milk and stir. Then melt in a knob of margarine to make the soup glossy. Taste and season.

Leek and Potato Pie

2 leeks
2 large potatoes
vegan margarine
100ml soya milk
salt
pepper

Wash the leeks and finely chop them. Cook them gently in a large knob of margarine until soft. Meanwhile peel the potatoes and slice them. Boil them for 10 minutes. Once the leeks have cooked add the milk to them and then transfer to a baking dish. Once the potatoes have boiled for 10 minutes place them on top of the leek mixture. Spread the potatoes with a layer of margarine and cook in a preheated 200 degree oven for 30 minutes or until the potatoes are golden brown.

1 1/2 lb Bok Choy, fresh as possible
1/3 cup Salad Oil
2 tbl White Wine Vinegar
2 tsp Dijon Mustard
2 tsp Soy Sauce
1 x Clove Garlic, minced
1 tbl Fresh Ginger Root, finely chopped
1/2 tsp Sugar

With grilled chicken is to really good. Making soup and stew using those, and even steaming them works.

Eat with rice if you like.

Leeks look like large green onions, and they have a more complex onion flavor. They're often cooked as a vegetable side dish (like asparagus), or used in soups (like a yellow onion).

I add B. Choy to stirfry, Not much of the leafy part.
Leeks are simmilar to onions, I would make a cream of leek soup.

You can fry, stir fry, or boil them just like cabbage. It is delicious. I usually buy baby bok choy.
