I am planning a romantic weekend for Amie. I have made arrangements for our son to spend the night at Amie's sisters house and am planning to cook her dinner and have a romantic night for just the two of us.
I know she loves meat loaf and caribbean cooking. Does anyone have a caribbean meat loaf recipe that they would be willing to share. And what side dishes would you serve with that
I have an extra special dish planned for after the meal. Amie will finally get what she has been hinting at----if you know what I mean.

I have a meat loaf recipe that you could try. I don't know if it is exactly caribbean but it includes pineapple.

MEAT LOAF:

1lb. Ground Turkey or Beef.
1can Pineapple
1tsp. Oregano
1tsp Pepper
4tsps Bacon Bits
1 Green Pepper (finely chopped)
1can Stewed Tomatoes
3 tsps Oatmeal flakes

Preheat oven to 350 degrees.
Combine the ingredients in a large bowl. Put on pan and
shape into a loaf.
Bake for 1 hour in 350 degree oven.

I usually serve this dish with caribbean macaroni salad.

CARIBBEAN MACARONI SALAD:

3 lbs Macaroni
5 cups Ranch Style Dressing.
3 cups Bacon Bits
.25 lb Chicken (finely chopped)
.25 lb Honey or Maple Ham (finely chopped)
1 Green Pepper
1 Onion
1tsp Oregano
1tsp Pepper

1. Boil a pan of water and soften macaroni noodles.
2. Mix all of the ingredients together making sure Ranch
dressing is evenly spread througout and covering all noodles.
3. Chill slightly before serving.

This meal will most certainly WOW Amie and get you want you want.

I've never heard of Caribbean meat loaf, but I guess you could try this one with mixed veggies or sautéed potatoes.

Sweet 'N' Sour Meat Loaf

(serves 2)

1/3 cup and 1 tablespoon water
1 tablespoon brown sugar
1 tablespoon vinegar
1-1/4 teaspoons cornstarch
1-1/4 teaspoons corn syrup
1-1/4 teaspoons soy sauce
1/4 teaspoon salt
MEAT LOAF:
3/8 eggs
1/2 teaspoon Worcestershire sauce
3 tablespoons and 1/2 teaspoon dry bread crumbs
1 tablespoon and 1-3/4 teaspoons chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
6 ounces lean ground beef
1-1/2 ounces ground pork

In a saucepan, combine the first seven ingredients; bring to a boil. Cook and stir for 2 minutes or until thickened; set aside.
In a large bowl, combine the first six meat loaf ingredients; add 2/3 cup of the reserved sauce and mix well. Crumble beef and pork over mixture and mix well. Pat into two greased 8-in. x 4-in. x 2-in. loaf pans. Pour the remaining sauce over loaves. Bake, uncovered, at 350 degrees F for 50 minutes or until meat is no longer pink and a meat thermometer reads 160 degrees F-170 degrees F. Let stand for 10 minutes before slicing.

meatloaf is a great thing you can add anything in to it...carribean hmm try pineapple, seriously and BBQ sauce, okays it a bit hawaiian, but do the fallowing:

1pound of raw meat (hamberger)
1 egg
1 cup of crackers
salt
peper
pineapple chuncks
mix and mold then bake in the ove with bbq sauce on top.

Don't serve meatloaf -- you fool -- she'll be all weighted-down and sluggish. You want something light and spicy.
