I did a little research -- I don't know if you'd want to make them yourself, but these recipes look good and fairly simple.

yes, you sure can. You may have to adjust the cooking time slightly as some noodles take longer to cook than others. But your recipe should turn out just fine.

i would use fettuccine or a broader flat pasta. not all packaged noodles are egg noodles
