SLOW COOKER BBQ CHICKEN
My favourite summer recipe (yes it is winter but it is good to be prepared) for crock pots is to:
put sliced onion on the bottom,
top with chicken pieces and seasoning (pepper, bay leaf, cayenne),
carrot &/or celery (if you have them)
top with water
cook on low for 5 hours (I have left it 9 before)
You now have cooked chicken that can go right on the bbq with your fav bbq sauce (the chicken is fully cooked so you don't get the black outside and pink inside of some bbq chicken)
and chicken stock to use for lots of different things
AND you did not heat up your house.

Pulled Pork Barbecue
A pulled pork recipe made with pork roast and barbecue sauce, along with onions and other seasonings. Scroll down to see more pork rost recipes.
INGREDIENTS:
* 4 lb pork roast
* 2 onions, sliced, divided
* 1 onion, chopped
* 5 or 6 whole cloves
* 2 cups water
* 16 oz bottle of your favorite BBQ sauce
* salt and pepper
PREPARATION:
Place one sliced onion at the bottom of Crock Pot.
Stud pork roast with cloves and season with salt and pepper.
Place roast in slow cooker on top of the sliced onion. Cover with the second sliced onion and add enough water to fill Crock Pot two thirds of the way.
Cover and cook on low 8 to 12 hours.
Remove roast. Remove and discard cloves, bone and fat as well as any water, onions and grease remaining in pot.
When pork roast is cool enough to handle, use a fork or your fingers to pull it apart until the entire roast is shredded.
Return the pulled pork to the crockpot. Mix in the chopped onion and BBQ sauce and cover. Heat on high for 1-3 hours or until the onions are soft.
Serve on large, crusty buns with a mustard based Carolina-style BBQ sauce. Garnish with dill pickle spears, thinly sliced raw onion and pickled pepperoncini (Italian banana peppers). Serve with crisp, homemade slaw. Carolinians would put the cole slaw on the pulled pork sandwiches..that's up to you.
NOTE: The above is the original recipe I was given. I have cooked the roast on high instead of low when I was in a hurry and didn't have that long. I have also done the last past on low and left to heat while we were at church and then it was ready to eat when we got home. I used a BBQ sauce that was very thick the first time and it was pretty dry, so since then I add a little water to it and it turns out perfect.

You can cook any recipe in a slow cooker that you would simmer on top of the stove. The 2 things you have to watch are the liquid and the spices you use. Liquid doesn't boil away in the slow cooker so cut 1/4 of the liquid called for in the recipe and only use 3/4.of it. Unless you are going to use the liquid as gravy Spices are intensified in a slow cooker so use a light hand. Try doing a roast in it. Put a layer of onions cut in rings and carrot circles in the bottom Then add the roast seasoned with salt and pepper and some beef broth. Cook on low for 8 hours

the slow cooker should have recipies with it. i say that because i tried some & they were good when i bought mine. an easy beef stew is some cubed beef about 1 to 1/2 lbs. 2+ cups of bite size potatoes about 3 chopped celery stalks, 3 chopped carrots or maybe 1/2+ pound of baby carrots, 2 medium tomatoes chopped, 1 small onion cut up & a couple of garlic cloves. salt & pepper to taste if you have it a little of oregano & a pinch of savory, if desired, add 1 bay leaf & remove after cooking. I like to use the reynolds slow cooker liners they make cleanup a snap. put the liner in the crock pot first then the veggies on top put the meat, add water to cover cook on low for about 6 1/2 hours. the liner, when you are done after food is removed from crock pot can be thrown away

SLOW COOKER HAM
INGREDIENTS
2 cups packed brown sugar
1 (8 pound) cured, bone-in picnic ham
DIRECTIONS
1. Spread about 1 1/2 cups of brown sugar on the bottom of the slow cooker crock. Place the ham flat side down into the slow cooker - you might have to trim it a little to make it fit. Use your hands to rub the remaining brown sugar onto the ham. Cover, and cook on Low for 8 hours.

Put whatever kind of seasoned meat or poultry you like in your slow cooker. Pour in a can of cream of mushroom soup and a half can of water. Stir it around. Then, put in some garlic powder, thyme, and chopped veggies (onion, carrot, and potatoes). Turn the cooker on low and let it cook for 6-8 hours with the lid on.

For something simple and very British, try a sausage casserole (also works really well for any other kind of casserole and also chunky vegetable soup). This basic recipe can be altered and doctored to suit any taste, using any meat or vegetables, and is great comfort food in the winter!
Just chuck in some chopped potatoes, carrots, mushrooms, onions or other kind of hard vegetables you like (sprouts, turnip, celery, etc).
Add any kind of sausages you like, cut into smaller pieces.
Add your liquid so it just covers everything. I like to use a can of chopped tomatoes as well as water, but you can add left-over wine, stock, etc.
Crumble in a couple of stock cubes, a bit of dried mixed herbs, some pepper if you like it a bit hotter, and any other flavourings you want.
Then turn on the slow cooker, go to work, and when you get home in the evening your dinner will be ready for you!

Love this stuff...simple, easy, and really good. I know it sounds like a lot of soups, but go with it, the sauce it makes is great.
Flavorful beef and gravy
1/3 cup all-purpose flour
3 pounds beef stew meat, cut into 1-inch cubes
3 tablespoons vegetable oil
2 cans (10-3/4 ounces each) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed golden mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1-1/3 cups milk
1 envelope onion soup mix
Hot cooked noodles or mashed potatoes
Place flour in a large resealable plastic bag; add beef and toss to coat. In a skillet, brown beef in oil. transfer beef to a 5-qt. slow cooker. Stir in the soups, milk and soup mix. Cover and cook on low for 7-8 hours or until the meat is tender. Serve over noodles or potatoes. Yield: 10-12 servings.

Thanks I was just about to ask this question. I got a slo cooker at Xmas and like you am not very inventive. Ive made Corned Beef Hash and Chicken Casserole but have learned that you shouldn't put too much liquid in the slow cooker as it is very runny, don't cover your veggies just put a small amount in the bottom of your pot.

Shin of beef in red wine. You cant beat it for comfort food at this time of the year.
Fry shin of beef, and onions and mushrooms, add beef stock cubes and red wine, heat through and thicken a little,and put in slow cooker all day. Put some dumplings in later if you want it extra special, and wash down with loads more red wine while sitting by a log fire!!
ENJOY!!!!!!!!!!!!! (Always heat everything up before putting in slow cooker, so that it cooks all the time instead of heating up.)

MEAT PILAF
1/2 kg. lamb meat
2 onion sliced length wise
2 tomatoes finely chopped
1 tsp garlic paste
1 tsp ginger paste
1 tsp chili powder
1 tsp turmeric powder
1 tsp garam masala
4/5 cardamon pods
juice of one lime
1 1/2 tsp salt
1 tbs chopped coriander
2 cup (350 gms) basmati rice (washed and soaked in water)
2 tbs ghee (clarified butter)
1 cup water + 1/2 cup hot milk
Rub the bottom of cooker with ghee
Mix all the ingredients except rice and water milk mixture. Pour it in the bottom of the cooker. Discard the water from rice and layer it over the meat. Add water and milk mixture and cook covered for 8/10 hours. You can substitute chicken or beef instead of lamb meat. Open it just before serving.
Optional - add pinch of saffron to the milk
serves 4-6 people
