Does anyone out there know how to make the liquor that goes with pie&mash. It use to be my hubby's favourite meal when he was a kid growing up in the east end.

According to Wikipedia the liquor that goes with pie and mash is a parsley sauce.

From the other answers I'd say you need to ask your husband or maybe members of his family what the liquor was like that they remember - it may be the parsley flavored one or it could be normal gravy becuase there are those who do call that "liquor" too.

I put pie mash and liquor in a search engine and a recipe came up on www.hub-uk.com/foodpages36/1797.htm.(Try the search engine if I have typed in the website wrong. I used the yahoo one)

It's basically gravy (brown).
If you have any meat juice mix it with flour till you have a thick paste, add boiling water till it's the consistency you want and add either bovril or gravy browning to it, add salt and pepper to taste. You can add a splash of stout to it as well. bring it to the boil and serve. :-)

was it made with the juices left over from cooking the meat. thats the only thing i can think of.
