i have to make a wedding cake and i'm going to put roses on it, but i have a 1 year old and its hard for me to do all things that needs to be done all in a day or two; so i was wondering if i can do them in my spare time and then freeze them and put them on the cake when im ready

Buttercream or royal icing made without milk or butter (or any other perishable items) will be able to last several weeks unrefrigerated. If you're saving unused icing, store in an airtight container and mix well before using. If you're making flowers or other decorations, you can store them in the same way.

Royal icing is better for making decorations ahead of time -- decorations that last -- but not recommended for icing the cake itself. Here's a simple recipe just in case you're unfamiliar with royal icing:

Ingredients:
3 Tablespoons Wilton Meringue Powder
1 lb. (4 cups) confectioners' sugar (about 1lb.)
6 Tablespoons warm water*
Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer). Recipe makes 3 cups.

NOTE: Keep all utensils completely grease-free for proper icing consistency.

* For stiffer icing, use 1 tablespoon less water.

**When using large countertop mixer or for stiffer icing, use 1 tablespoon less water.

You can make them ahead of time but don't freeze them- if they're made of royal (or stiff) icing they will keep just fine loosely covered.
