Parsley is easy and cheap, but it can get sloppy if you use more than a small sprig or some snips, so for larger garnishes try kale. At Thanksgiving and Christmas I use fresh cranberries - and you can never go wrong with berries to garnish any desert.
Lemon is the gold standard for fish of any kind, but fresh fennel is also lovely and complimentary.
At Easter I buy packets of edible flowers and garnish everything with them!

That's a tough one. I've used grapes, strawberries, and mixed berries for a garnish on a meat and cheese tray. Leaf lettuce is always good to make the bedding for trays. For cooked dishes I love fresh cilantro or Italian parsley, sometimes fresh basil, depending on the dish.
My ex used to be able to make vegetable animals, like a penguin out of an eggplant. I still haven't mastered that.

The best fruit garnish would be an assortment of blueberries, raspberries, and blackberries. For vegetables, it'd be thinly sliced carrots. For herbs it would have to be a sprig of parsley for meat and a sprig of mint for dessert.
