i'm having beef and mushroom pie for dinner and want potatoes with it but can't decide what to do with them... any ideas???

Well if you are tired of the normal boil and bake thing, why not grate them and lightly brown them. Sort of like hash browns in the USA. Add cheese or garlic and herbs and its a great idea for something different!

Just tried this the other night and we will make it again next week - absolutely wonderful.

Scalloped potatoes with leeks and cheese.

How much cheese and what kind is your choice. Just make sure it is grated. Swiss mixed with sharp cheddar was great.

Peel, quarter and slice pots. Sautee about 1 1/2 cups work of leeks. Mix leekes with raw potatoes. Sprinkle 1/4 cup of four and mix pots up again.

Get 1 cup of milk, grated garlic (optional - we use a lot) s & P and mix together, then mix with pots and leeks.

Place
1/3 of the pots on the bottom of a buttered pan, sprinkle 1/3 cheese, more pots, more cheese. End with cheese I also sprinkle some parmesan on top. Place in oven at 375.
Pots will be ready in about 1 hour, 15 minutes or so. Let sit 15 minutes.

Potatoes au Gratin

Ingredients:
------------
4 tbsp butter
3 tbsp all-purpose flour
2 tsp salt
1 tsp black pepper
2 cups milk
5 large potatoes, peeled and sliced into medium-thin slices
2 onions, peeled and chopped
1-1/2 to 2 lbs sharp cheddar cheese, cubed or sliced

Instructions:

In a medium saucepan, melt butter and add flour, salt and pepper. Pour in the milk and stir frequently till thickened. Set aside.

Preheat oven to 350 degrees. Lightly butter a large casserole (3-1/2 to 5 quart).

Layer 1/4 of the potatoes, 1/4 of the onion, 1/4 of the cheese and sprinkle with salt and pepper. Repeat the next layer. Then, on top of the second layer, pour half the white sauce over (be a little reserved because you want the majority of the white sauce on top of the finished casserole). Then, again, repeat the next layer with potatoes, cheese, onion, salt and pepper. Repeat the final layer with same. Pour the remaining white sauce over the top, making sure you cover all. Sprinkle the final product with salt and pepper.
Cover and bake 1 hour. Then, remove the cover and bake for another hour. Don't worry if it gets a little dark on top.

Onion Potatos

Description:
These are quick and cheap potatos with alot of flavor and only a little fat.

Ingredients:
6 medium to large russet Potatos (Can also use red or white potatos)
1/4 cup olive oil
1 tbls. minced garlic
1 packet Lipton Onion Soup Mix


Directions:
Preheat Oven to 400 degrees.
Chop potatos and mix in a large bowl with olive oil, minced garlic and soup packet. Spread in a large glass pan or non-stick baking dish. Cover with lid or aluminum foil. Bake for 20-30 minutes or until done. (Note: they will not brown but they will be very tasty) :)

Bake the potatoes just as you would to serve with a steak, but split them in half and dip out all the potato, hold onto the outer part. Mix the potato with bacon bits, shredded cheddar and diced green onion. Stir all that up and then put it back in the out part of the potato and bake them until the cheese melts good. Like twice baked potatoes.

Parmesan potatoes

2 lb. new potatoes, quartered
1/4 cup olive oil
1-1/2 tsp. Italian seasoning
2 cloves garlic, minced
1/3 cup KRAFT 100% Grated Parmesan Cheese

PREHEAT oven to 400°F. Toss potatoes with oil, seasoning and garlic. Add cheese; mix lightly.
SPREAD evenly into 15x10x1-inch baking pan.
BAKE 45 minutes or until potatoes are tender.

Ingredients:
Red potatoes
Garlic powder--or fresh garlic chopped fine
Onion Powder
Butter
Salt
Pepper

Wash and thinly slice potatoes with skin on. Melt a pad of butter in low-medium heat in medium skillet. To prevent butter from burning you can add a tsp of olive oil. Once butter is melted and pan is heated add potatoes. Season with a pinch of salt and 3 cracks of pepper. Allow potatoes to cook while you mix occasionally. You may need to add more butter (if there is a concern about fat content, use a low fat butter) Add garlic powder and onion powder. Once potatoes are cook thru (about 15 mins) you can add the seasoning to taste depending on how much garlic you like. top w/ fresh chopped curly parsley for color. A rustic style potatoes recipe for a rustic dinner.

Red potatoes are good. You can eaither cut them up or leave them whole. Boil them until tender. Just add butter. Delicious.

I don't know how to make mashed potatoes unless they're in a box and have directions, but you cna buy some really good ones at the store in the box. Garlic potatoes are really good.

Par boil some small potatoes, and douse them with a butter/dill sauce. Or mashed. Or fried. Are there any bad potatos?

i would always say mash because mashed potatoes are the best potatoes but if you want something more adventurous then peel and slice them thinly, layer them in an ovenproof dish that you've buttered the inside of, fill the dish about three-quarters full with stock, dot the top with butter and bake for about 40 minutes or so, at the same temp as your pie, then eat!
