I'm having a difficult time finding a good DVD recorder that offers HDMI / upconverting. All of the ones I've found always have something horrible mentioned in their review.

I would appreciate any recommendations you have.

I recommend to skip the upconverting.
All HDTVs do automatic upconverting of 480i/480p video and most probably they have better deinterlacer/scaler than your DVD player or recorder.

Just buy a DVD recorder with component out and you will be just fine.
