All the websites tell me 'don't cook with a wine you wouldn't drink' - - since I'm allergic to the sulfites in wine, I don't drink it.
So I'm totally stuck on what I need to buy for a chicken francais recipe that calls for 'dry white wine'. Is there a brand? a type? - I really know nothing about what to buy.
As for the allergies, the sulfites are gone due to the cooking process so I can eat the meal I am making.
Please help. Thank you.

As for the organic wines contain no sulfites - you are incorrect. ALL wines contain sulfites, organics contain much less because they (generally) do not add more sulfites as a preservative. Due to my severe allergy (tongue swelling, throat closing) it is highly recommended that I do not ever drink wine, even the 'organic' or 'no sulfites added' wines.
Which is why I checked with my allergy specialist about consuming food cooked with wine - the sulfur dioxide (sulfites) totally disipate during cooking.

Any Chardonnay or Riesling would be best. Try to get something between $5 and $10. Do NOT buy cheap and do NOT buy cooking wine (those are examples of wine you would not drink)!

Holland House is a brand of cooking wine with a wide variety available in most grocery stores. You can usually find it in the cooking oil aisle, or near the condiments and marinades. It comes bottled in smaller amounts than a regular bottle of wine, and it's reasonably priced.

Taste the wine and determine if it has the flavor that will enhance the other ingredients you are using. Why do you think a chef always has a glass of wine in his hand?

all wines sold are sulfites contain, if you want to bypass your problem, you should buy organic wine. this type is not chemically sprayed, and no sulfite contain. try buying it fresh produced, couse sulfites make wine longer " shelf time" and organic is not.

I use cheap & simple cooking wine. Goya white wine & red wine. They are a few bucks each & taste great in any dish
