I was wondering if I ate a greasy cheeseburger and fries on Thursday, then at healthily for the next two days, would I still feel the lag from the greasy foods on Saturday? Which is when I'll be playing a very intense/active/cardio sport.

Different foods take different amount of time to digest. Generally, a hamburger will be completely broken down within 48 hours, french fries in 24 hours. It will depend upon your metabolism, which decreases with age.
The slowest food to digest by the way is pork. It can take a week to completely digest pork. So stay away from greasy pork chops.

it takes a total of 24 hours for most foods to move through your system completely. i think you'll be fine for your sport playing
